You've got this brother, I know we have all heard the Chinese word for crisis is composed of two characters, one representing danger, and the other representing opportunity. Beyond the advantage of being a Christian, you also have your new mental health, physical fitness, and "carnivore Zen" on your side as you search for a new position! Praying for you.
Sorry to hear you are struggling. My wife and I are going through some financial difficulties as well. There have been quite a few times we've gotten electric company and city water disconnect notices and I've had no clue how I was going to pay them. Fortunately, The Lord has always come through with exactly what we need, at just the right time. I agree it's frustrating, but I believe He does that as a reminder for us stubborn men that He's got us, and He's the one in charge. I hold out hope for you, that He will cover your needs at just the right time as well. A priest mentor of mine had a favorite saying. God is the slowest guy in town, but he's never late. Stay strong, Mike. Know that you are in my prayers.
Stress will definitely impact weight loss and it is frustrating. Praying for your finances! I know the Lord takes care of His kids. You will be ok! I had a big ol' pork chop after my hike! Tasty!

It definitely gets harder when the initial improvements have already passed and the more subtle changes take over. It is happening though, even though it's not always outwardly evident!

Carbs aren't bad , you need some carbs to fuel your workout. You also need carbs post workout to recharge your muscle. Carbs are only a issue if you eat a lot of it and do not workout to burn them.
A lot of truth there. Muscle is a great glucose store. If you're burning that off you won't store fat. There are other benefits to Carnivore besides weight loss, but yeah.
I am also doing the carnivore diet for 1.5 months now and I have type 2 diabetes also, but I do eat carbs to fuel my resistance training , most of my calories still come from beef, lamb. There is no need to be a purist , carnivore is not a religion.
I believe everyone should do what works for them. I like the results I'm getting. But yeah, if carbs work for you, then awesome! I agree. There is only one God and Carnivore ain't Him.
