I love corn fritters but I make like mama did, we put flour in our fritters and some finely diced onions. It’s really yummy. That make me want to make some with a big slice of tomato. 😋

I have never made corn fritters. I’ve made fried cornbread but never corn fritters. My husband Jerry, loves corn anything, but not corn bread. Isn’t that weird? 😉 No, seriously when we married 52 years ago, the only vegetable he’d eat was potatoes and corn. He’s come a long way, but still no cornbread. I told him, he’s not really southern then. But I still love him.🥰
I've never seen a recipe for those without flour or cornmeal. Sounded interesting and worth a try but I think I'll be adding some flour like you did because the texture looks better to me. 😋 ❤

Oh you definitely need flour. I make mine with corn, flour, baking powder, salt, a bit of sugar, eggs, milk and then I fold in the egg whites to make the batter fluffy and use a cookie scoop and plop them in grease. I make honey butter to go with it and they are delicious 😋

My mother, who was not southern but lived in FL, made corn fritters all the time. She used plain flour, canned kernel corn (not creamed), beaten egg and pan-fried them in butter. They were SO good. She made rice fritters in a similar way. I miss her and her cooking.
I think they may have cooked better without flour if you turned the heat down and put a lid on the pan and not try to turn them to early . just my opinion. love your channel!😊❤
Hi Tammy. Aussie corn fritters recipe. Plain flour 1 egg, tinned or fresh corn. Some chunky cooked corn brisket cut into small cubes plus a good dash of soda water. Seasoning to your choice salt pepper etc. Mix and add more soda water as required. Batter should be thick enough just blob off the spoon. Cook in butter. They will expand while cooking due the soda water prob 2 - 3 times and be a good inch thick. I load mine up with cajun seasoning cause I like em hot. Enjoy.

I’ve seen ppl make them like pancakes before on here, but we use whole corn, and deep fry them, so we get the round’ish, crispy fritters. And we always serve them drizzled in honey.🍯 I’ve only ever used the flour recipe, but I’d definitely try your pancake recipe sometime that I don’t want the big mess of having to deep fry them. My Nana always used SR flour in hers, so I do too. And I have never heard of separating the eggs, always learn something new while watching you. I absolutely LOVE your hair cut and color!! It looks wonderful on you!!!
No matter how much flour & eggs u put in your fritters, if u add too much milk or liquid in them, they will fall apart. They need to have the right amount of moisture in them or else they will fall apart. However, u don't want them dry either. The right texture is very important when frying foods!

Yes, you need to put some self rising flour, to hold them together. i make them all he time, also onion fritters are good as well. The Hill billy cook Becky Walker makes all kinds of fritters.
Egg whites fluff up more and hold their fluff a little bit better if you use a copper bowl. I think that's the only advantage of all the copper cookware--people basically only buy copper for the look. I've been making corn pancakes for a lot of years. I use pancake batter but use more less milk and the best quality cream corn I can find. It's all about the cream!

Yes, Becky Walker on hillbilly kitchen made pinto bean fritters! You can even make the fritters with a can of refried beans, if u want! It may be that people will be eating all kinds of fritters to make ends meet if grocery prices keep going up!

It's copper that makes egg whites beat faster or quicker due to the mild leaching of acid similar to as if you added cream of tartar. If you ever watch Adam Ragusea he does a lot of food science and just did a video on copper cookware.

When I make mine, I use a cornbread base. I add creamed to my cornbread mix. I always get compliments on them

Since you are cooking with corn how about adding corn starch. I think baking powder is mix with corn starch?
