As one who has been carving pumpkins for 30 years, here's a few little tips. Cornelius may even appreciate them.
When cleaning out the insides, begin to scrape from the top down using THE BACK of the scraping tool, going just below the gooey part and slightly into the pulp (wall) of the pumpkin. Then, once you get about half-way down, begin scraping UP with the FRONT of the scraper. Finish by doing the whole bottom. I find it's a lot easier to just keep scraping all the membranes (the gooey part), until it's completely loosened. Don't take it out in pieces-- it's a mess! Once you have it completely loosened, dump it out into a lined wastebasket.
Also, thin the wall of the side you plan to carve to about a 1/2 inch. It makes carving much easier. Do be careful with any area with a lot of small cuts-- do all the cuts first, then remove the pieces at the end.
When it comes to placing the stencil, I just pin it at the top, bottom and sides, then hold it as I'm working. I never poke holes too close-- about 1/8" to 1/4" (inch) is fine. Any closer and you run the risk of cutting a hole in the paper. Also, when you're finishing poking, remove the stencil, but check to make sure you didn't miss any major portions-- I've done that! If you have missed a spot, you can either place the stencil back carefully making sure to line up the existing hole, or poke them freehand. You can also using a sharp pencil to poke holes-- that works.
I like the idea of coloring in the areas. I just keep the stencil (rather than taping it to death and throwing it away) and use it as a reference.

@@CorneliusCreations Yes I did and I also enjoyed looking at the pumpkinlady's website and templates. She had the tips and tricks you finally used to better fit the design onto the pumpkin. BTW, here's another tip. After you poke your holes and remove the paper pattern, rub flower or cornstarch into the holes. Makes them white and easy to see!
I can't hold one of those dremels well (old weak hands) but I have a cheap thing they made in the 80's or 90's for girls to do their nails with. It's battery operated and much smaller and lighter to hold. The small dremel bits fit it perfectly! I plan on trying it first.
