This looks so good Maangchi! This reminds me of my cousin's take on the Kabocha pumpkin! The difference is that she stuffs the pumpkin with pork short ribs with black bean sauce, and steams the meat and pumpkin together. =)
oh, it sounds like the dish is called yakshik (약식). It's made with sweet rice, brown sugar, chestnuts, jujubes, cinnamon... yes, I will include it to the list of my upcoming recipes.

I notice you threw out the seeds but if the squash is like pumpkin, you can toss the seeds with soy sauce toast them at 225 F for 45 min to 1 hour for a crunchy snack. :)

This looks so pretty! I'll try it tomorrow:) When I cut out a lid from a whole pumpkin, I usually make 2 or 3 cuts (along the circle you drew first) then put it in a microwave for a few minutes. The pumpkin becomes softer, and I can safely cut it without risking to cut myself. I do the same when I need to cut a pumpkin into small pieces as well:D

I recently had a danhobak ban chan in a restaurant but none of the employees could give me a name, aside from it being a sweet pumpkin. :( Anyway, I'm a long time fan and figured maybe you have it on your site and this one is the closest thing to what I had minus the rice inside. It had raisins, sunflower seeds(?) and some peanuts. Do you have the recipe of what I'm describing or is this it? Thank you for sharing your home cooking!

@lastmomentof because of the black rice. black (glutinous) rice isn't really black - when you cook it, it tends to become a very dark, noticeable purple.
wow this seems like a lot of work for the amount that you get ^^. And the jujubes and pine nuts look very tedious! I don't think I would be able to make this often, but it looks so good!!!

@lrishTigerLily15 when you rinse the rice, you are just removing the surface dust there is from all the transportation and etc. the nutrients and starch would be inside the rice. That's why when we wash rice, you can't overwash it, because then you are beginning to wash away all the goodness and the rice will become too soft when cooked. I hope this helps from my experience as I eat rice everyday haha
Answering this old comment. This is luxurious version of traditional Korean cuisine. Way to make rice more nutritious. There are also lotus-leaf rice, rice in duck too!
hey maangchi, my favorite korean restaurant in edinburgh has "brown rice tea" is that the tea you make with the burnt rice? Theirs really smells like burnt rice but also looks like green tea

Mangchi, did you know you can save the pumpkin seeds and toast them in the oven? Season with salt,pepper, garlic powder, and maybe some hot pepper powder and they are a yummy snack :)
@KraXoom maybe you can make something similar to roasted pumpkin seeds? wash and leave to dry overnight, and then throw them into the oven with some oil and salt. :)

I think it's different from nooroongji tea that I show in this video. It must be burnt brown rice tea.
