  • First time cooking food in the Tongan traditional underground oven we call "Umu". We usually use lava rocks and river rocks to heat up the food, but I wanted to experiment using red bricks and lighter fluid to keep the fire from producing a lot of smoke in the air (thanks to a friend for the tip). Enjoy!

I bet there will be a lot of this in the Australian Tongan communities now that Israel Folau will soon be returning to Rugby League with the Southport Tigers. Best news I have heard in ages. Bon apetit!
