How to cook a Samoan umu | ABC Australia

    In Samoa, men and boys prepare an above-ground oven - called an umu - almost daily.
    It’s also a tradition being carried out by the rapidly growing Samoan diaspora in Australia.
    It’s one of the many ways that parents can pass on their culture to their children.
    In Rockhampton, central Queensland, Safanua Onehunga Mata’uiau is helping his son hone his umu-making skills, but there have been a few tweaks to account for the different environments.
    The wood burns a bit hotter, there is no fresh taro, and you have to account for your neighbours. But here’s a step-by-step to make your umu Queensland style.

    Love umu.
    The best way to cook good.
    Went out with a Samoan and the down side was I put on weight.

    I did this with 5 small piglets. We had exploding rocks. Burnt fingers. Rain. 12 foot flames when we opened her up and the oxygen hit the remaining coals. Wasn't my best dinner party as far as food goes but winding up to have another go soon!

    What can you use instead of alfoil?

      Banana leaves. For extra layer we usually use breadfruit leaves on top of it.
