Oatmeal Cream Pie Recipe, Copycat Little Debbie Recipe

  • Oatmeal Cream Pie
    Ingredients
    For Cookie
    1 cup shortening (I use butter flavored)
    1/2 cup sugar
    3/4 cup brown sugar
    2 eggs
    1 tsp vanilla extract
    1 tbsp molasses
    1 1/2 cups all-purpose flour
    1 1/2 cups quick oats
    1 tsp baking soda
    1/2 tsp cinnamon
    pinch of salt
    For Filling
    1/2 cup shortening (I use butter flavored)
    10 oz. jar marshmallow cream fluff
    1/2 tsp vanilla extract
    2/3 cup powdered sugar
    2 tsp hot water
    1/4 tsp salt
    Instructions
    For Cookie
    In a large bowl, blend shortening and sugars together until creamy. Add eggs, vanilla, and molasses. Then add flour, oats, baking soda, cinnamon, and salt. Mix until completely combined. Drop 1 tablespoon onto parchment lined cookie sheet. Bake 8 to 10 minutes in a 350 degree oven, until just starting to brown around the edges. Cool cookies completely on cookie rack.
    Pro-Tip: Use a food processor to process the oats into smaller pieces. This just takes a few pulses.
    For Filling
    In a large bowl, beat marshmallow fluff with shortening, powdered sugar and vanilla. Beat on high until fluffy. Add salt to hot water and mix until salt is dissolved. Add salt water and mix until well combined.
    Spread filling on one cookie and sandwich second cookie on top.

    When I was in college, I lived on Little Debbie Oatmeal Creme Cookies and Coke.

    is there an alternative to the shortening? maybe real butter?

      You can try with butter but it will have a different texture.

    Not sure if you can answer this or not, but when a recipe calls for "quick oats" would it matter if I only have the other type of longer cooking oats? This recipe looks fantastic! Can't wait to make it for my family.

      You can definitely use old fashioned oats just process them a little in a food processor to make them a bit finer in texture.
