In a muffin pan,
Cut up tortillas in each hole
Add one egg into each hole
Add bacon pieces to each
Add red bell pepper
Add cheese
Add chives
Season with pepper
350 for 17 minutes

I love your recipe. just tried it with some left over tortilla shells and precooked bacon, and they turned out great. I have been trying to replicate the AuBonPain 4 cheese soufle cups, but without all the work. and your method comes pretty close as far as taste goes
I will need to brown some onion and peppers too, for added flavor, the next time i do it.
