- This is how I poach eggs at home! It's really not as scary as you think ...the worst thing that can happen is you mess up and have a boiled egg (which you can still eat BY THE WAY!) There are so many different ways to poach eggs so I am not claiming this is the best or textbook way to do it...I'm just showing you how I slay it every time.
For a pan this big, I used about 1/4 cup of white wine vinegar. For a smaller pan, go with 2 tbsp.
For the hollandaise, here are the measurements below! Feel free to use pasteurized eggs if egg yolks freak you out (understandable) or you can pasteurize your own eggs at home.
▪️3 egg yolks (I used egg yolks from large Vital Farms eggs)
▪️ 1-2 tbsp lemon juice (I love the tang, so I do 2)
▪️ 1/4 tsp salt
▪️ 1/2 cup melted butter
▪️ any spices to your taste!
