  • No brunch menu is complete without eggs Benedict. When cooked properly, the poached egg on top releases a creamy yolk that perfectly runs down the Canadian bacon and English muffin. Those that have tried to duplicate this recipe at home fully understand the struggle involved with cooking a perfectly poached egg. It is all too easy to end up with an overcooked mess that ruins your Eggs Benny attempt. There are a few easy-to-fix mistakes that most home chefs are making when attempting this challenge.     It helps to filter out that very watery part of the egg white so you’re not left with those straggling swirly bits in your pot. They make cleaning harder at the end.

    All that is required for a poached egg is water (at least 3” deep in pan) with vinegar brought to gentle bubble. Boiling point of water is 212 degrees. As long as it has that boiling temp, you can add 2 eggs at a time for no longer than 3 minutes. Remove with slotted spoon immediately and let it rest for about 15 secs before adding it to dish. I don’t know what they were thinking with swirling the water. That is more of a way to mess up the yolk or cause uneven texture on the egg white.
    If you are bringing the egg directly from the fridge, it is better that way when adding to boiling water because it cooks the egg white surface, just like when you seer a steak or a roast. The remaining time will cook the rest of the egg white.
    I think that the folks who presented this video are trying to cook like the chefs in bistros and fancy diners. Fast is not always best. Plus it’s not a race, no fancy moves required.

    I had this kind of egg and toast breakfast all the time when I was young but i would add bacon and break into pieces to make like a pizza. I never been able to make poach myself and miss that breakfast. Now I might try again.

    My folks kept hens for their eggs and you can test your eggs in a bowl of cold water. If they rise from the bottom they are not fresh but if they sit about at the bottom of the water they are totally fine. They rise because of the gas being produced in the egg when it is off.

    The most important thing, not mentioned here, is to use fresh eggs. The white won’t spread out and there’s no need to swirl the water. Professional kitchens don’t use vinegar and you shouldn’t need to. If the eggs aren’t fresh then swirl the water.

    I tried the swirling method and I got was egg flower soup (stringy, messy whites) with a yolk. What did I do wrong? Egg were fairly fresh. No worries though, my dogs volunteered to eat the mess ups. They love me trying to make poached eggs. LOL

      Did you add vinegar to the water before poaching the egg? If not, maybe that's the reason. Vinegar helps speed up the coagulating process of the egg white to prevent it from forming ribbons.

    A splash of lemon juice on the egg in the bowl just before you drop it in makes it tighten up, so yeah, you've been doing it wrong also lol.

    Take 1/2 cup of cold water and pour it into a dish about 4 inches in diameter. Crack a single egg into the dish. Microwave for around 50 seconds more or less depending on your microwave. Perfect every time and so fast.

    You should really strain these eggs before poaching them. Extra egg whites is unnecessary and messy.

    Put boiling water in a coffee mug and drop in your egg. Microwave for 50-60 seconds. DONE. 💅🏽

    swirling water completely unnecessary.....use 3 inches of water ma a little vinegar and pour them in from a dish when the water starts to bubble not boil....cook 3 mins perfect eggs every time

    This video did not show how to properly poach an egg if more than one egg was needed. The water is swirled and then you drop in the egg, what about the next egg? Right, if you try dropping in the next egg right after the first it doesn't work and you might mess up the first egg. I guess this video is suggesting that you need one pan for every egg - sure, that's just what we need to do. Fail!

    What is this, 1980? Nothing new here. In fact, ATK has two videos that show better ways to poach eggs than this. Also, how much vinegar? This video doesn't say. Put a little to much and your poached eggs will taste like vinegar. If you want to see better ways to poach eggs, check out America's Test Kitchen's videos on the subject.
