Chef Sher oi, good attempt. good try. If I do it. I shall use the followings; 1. wax paper to bind it up 1st. followed with tin foil paper, 2. Chicken stuff with pak kei, hoong cho, kei chi, dong kwai, kwai peh, rice wine, soya sauce. 3. I shall mix sand, flour, corn starch and mix into dough. wrap all over tightly. but nothig better than roast it underground cover with mud. fire on top. Hope it gives alternate method and be helpful tip.

You can get the clay from the arts and craft shop but I understand that it is rather expensive. I spent quite a bit getting this clay, but only because I live in a condo and mud / clay isn’t accessible to me and I really wanted to try this recipe. 😄
hahhahaha I honestly don’t know and I wouldn’t try it though because cement has chemicals and additives in the mix that I wouldn’t want to have it anywhere near food 😂

roadside dirt/soil serves the same purpose, also more traditional to the 'beggar' name. Just wrap your chicken tight.

He can actually do it without the clay. He can try it in a pressure cooker.

Add parchment paper as the inner lining. All the juice will stay inside.
