Creepycat The definition of the word amazing is subjective, what one person finds amazing may differ from someone else, and that’s ok. I personally thought that this video was amazing content. Not only was it unique and clearly made with a lot of hard, long, and tedious work and effort, but it also was educational for those who have never heard of this before. To me, it’s pretty amazing to see someone foraging and making their own clay from scratch via a process that took several days (as opposed to just buying it or not using it at all), as well as actually baking a chicken inside of it! Definitely something I’ve never seen, and I enjoyed being enlightened and educated on something I otherwise wouldn’t have known! 😊

I assume the chicken keeps the moisture while cooking because the water can't escape since clay is impermeable, which would make the meat really tender. All that, paired with the 3 hours of cooking and the beautiful seasoning must make one delicious, tender and juicy chicken! Might try this recipe out!

I think the clay insulates it for a longer slower cooking time, and I suspect it is similar to sous-vide in texture and tenderness. I'm not sure if you can sous-vide a whole chicken though since it would probably take forever and be kind of ugly and raw looking. Yeah, a TON of work you wouldn't want to do unless you're having some sort of very special medieval dinner-party!
An alternative is stuff your chicken full of yummy veggies & mix and wrap in tin foil. You can toss the foil ball right into a camp fire and cook it up directly in the flames... then later get it out of the flames with a stick and yum - camp fire chicken!

So anywhere I dig more than 20cm (plough depth) down I'll find pure blue clay, untouched for 10000 years. Except for dandelion and creeping thistle roots, obviously. Nothing much else is able to penetrate through the plough sole (what we call the hard layer just below plough depth, formed from machines running over the ground above, compacting soil and not breaking it apart below 20cm).

Instead of harvesting my own clay, I've used a Romertopf French clay pot. It's glazed only on the inside of the pot. You have to soak the pot in water before you put the chicken in it. I've made some good chicken in that pot. I haven't done it in ages. It's just so much easier to buy a chicken already cooked for $8 during the week. But for a Sunday meal it's great. Appreciate all the effort this took. Great video as always.
I'm from Brooklyn but my Dad's from Indiana. When i was a kid (visiting there) they showed me how to dig clay....I was fascinated & thrilled! One of my favorite childhood memories, thanks for making me smile today!

It depends on how the newspaper is printed I think, still not sure how good it is to be eating paper but most newspapers are printed with vegetable ink so it should be fairly safe to eat I’m assuming. I line my birds cage with newspapers because if they end up chewing on it the ink won’t hurt them
Well, the chicken is already well-packaged with the lotus leaves, so the newspaper shouldn’t have any affect on the chicken. But I’m not an expert by any means.

Hi Emma, There is a similar (somewhat) style of cooking in my homeland - Punjab where a whole chicken is cooked wrapped in muslin cloth and covered in whole wheat flour and cooked in a clay oven. :)

@@margosaur Parchment probably wouldn't work because they prevent the moisture from escaping. Traditionally Chinese people use Xuan paper (宣纸) to wrap it. And since this paper is basically made from rice, it's very safe to be used for cooking.

This is REALLY weird and amazing to me. Growing up Chinese, l believed classic Chinese cooking did not include baking, despite being known for their ceramics lol. Hiding a stolen chicken in dirt? Then baking it? Genius. (No really, from what I've seen, my family does not bake Chinese anything. It's either stir fry, pan fry, fry, boil, or steam.) I've never heard of this dish in my entire life. I assume it's something regional. Also do not use run of the mill ham, you need to choose a fatty cut, like pork belly for best flavour that won't dry out, even fatty uncooked bacon will do the trick,
typical home cook and restaurants won't do this dish due to the amount of labor and time. in my city there are a few that does this but they all require you to pre-book a day ahead.
I made this. My family liked it. It's a keeper. I plan on trying it using a pork roast. I had to order the lotus leaves on line and I got the clay from Hobby Lobby a 25 pound box. Need less to say I had a lot of clay left over.

They used lotus leaves to protect the chicken from the clay and impart flavor. Proceeds to cover it in shiny newspaper, which I happen to know for a fact does not taste good.
not only that but i wouldn't want to bake anything in newprint. ink dyes are pretty nasty. admittedly i doubt any significant amount is released, particularly given how none of it fumes with the clay covering. still... just why. if you need a steam barrier for the clay just use a paper towel or butcher paper layer.
I thought so too! That’s how you usually make tamales in Mexico (we use banana leaves instead of the lotus ones tho) and nothing goes through them if you know how to properly wrap things up.
I think the newspaper is just a tradition kinda like how fish n chips are traditionally served in newspaper. It may seem nasty but to people who grew up eating it like this the taste is nostalgic

Some places do just have clay deposits. There was a particular spot at my elementary school that did.

So anywhere I dig more than 20cm (plough depth) down I'll find pure blue clay, untouched for 10000 years. Except for dandelion and creeping thistle roots, obviously. Nothing much else is able to penetrate through the plough sole (what we call the hard layer just below plough depth, formed from machines running over the ground above, compacting soil and not breaking it apart below 20cm).

This is why I love watching Emmy. Not only do we get a recipe but the history behind it. This was very interesting.
Instead of harvesting my own clay, I've used a Romertopf French clay pot. It's glazed only on the inside of the pot. You have to soak the pot in water before you put the chicken in it. I've made some good chicken in that pot. I haven't done it in ages. It's just so much easier to buy a chicken already cooked for $8 during the week. But for a Sunday meal it's great. Appreciate all the effort this took. Great video as always.

It depends on how the newspaper is printed I think, still not sure how good it is to be eating paper but most newspapers are printed with vegetable ink so it should be fairly safe to eat I’m assuming. I line my birds cage with newspapers because if they end up chewing on it the ink won’t hurt them
Well, the chicken is already well-packaged with the lotus leaves, so the newspaper shouldn’t have any affect on the chicken. But I’m not an expert by any means.

Since the 1980s newspapers use a soy based ink. It's not dangerous at all.

There is a similar (somewhat) style of cooking in my homeland - Punjab where a whole chicken is cooked wrapped in muslin cloth and covered in whole wheat flour and cooked in a clay oven. :)

@@margosaur Parchment probably wouldn't work because they prevent the moisture from escaping. Traditionally Chinese people use Xuan paper (宣纸) to wrap it. And since this paper is basically made from rice, it's very safe to be used for cooking.

This is REALLY weird and amazing to me. Growing up Chinese, l believed classic Chinese cooking did not include baking, despite being known for their ceramics lol. Hiding a stolen chicken in dirt? Then baking it? Genius. (No really, from what I've seen, my family does not bake Chinese anything. It's either stir fry, pan fry, fry, boil, or steam.) I've never heard of this dish in my entire life. I assume it's something regional.
Also do not use run of the mill ham, you need to choose a fatty cut, like pork belly for best flavour that won't dry out, even fatty uncooked bacon will do the trick,

typical home cook and restaurants won't do this dish due to the amount of labor and time. in my city there are a few that does this but they all require you to pre-book a day ahead.

I made this. My family liked it. It's a keeper. I plan on trying it using a pork roast. I had to order the lotus leaves on line and I got the clay from Hobby Lobby a 25 pound box. Need less to say I had a lot of clay left over.

not only that but i wouldn't want to bake anything in newprint. ink dyes are pretty nasty. admittedly i doubt any significant amount is released, particularly given how none of it fumes with the clay covering. still... just why. if you need a steam barrier for the clay just use a paper towel or butcher paper layer.
I thought so too! That’s how you usually make tamales in Mexico (we use banana leaves instead of the lotus ones tho) and nothing goes through them if you know how to properly wrap things up.

I think the newspaper is just a tradition kinda like how fish n chips are traditionally served in newspaper. It may seem nasty but to people who grew up eating it like this the taste is nostalgic
