Greetings, Steve and Courtney! Thanks for the video. When making that pudding we use half and half or heavy cream. It makes a difference, I bet. You're right, though. It's nothing like old school snak-paks, or canned Hunts (which was a delicacy long since gone. The typical way we eat our keto pudding is in a parfait of sorts with HighKey cookies and stabilized whipped cream. My wife Gretchen uses the banana pudding with some added banana extract with HighKey vanilla cookies and stabilized whipped cream. It's the closest we can come to banana pudding, and it's "close enough" to kill cravings. Thanks again! Cheers!

Hardly any thing that says keto in the super market is keto! It’s loaded with starchy sugars! I use 8 oz. heavy whipping cream, 3 tbsp. chia seeds (fiber), Hersheys zero sugar with stevia chocolate syrup, shake and refrigerate. I like pudding, pie, cake, etc. Thanks Steve & Courtney
Interesting. I'm wondering if you got a bad batch. I've had both the vanilla and the banana flavours, and absolutey loved them. I made them with both almond milk as well as Milkadamia, with no lumps or weird texture. I'm also a big fan of their jello mixes. As a type 2 diabetic, I fund these don't cause spikes so they're great treats to have on hand :-)
I forgot to add that when I'm mixing small volumes, like just 1.25 cups, it's far better to use a tall, narror bowl or beaker instead of a bowl. I usually use a 1.5 pint / 750 mL mason jar with a single beater on my handmixer, and just mix for two minutes and it's done.

I like pudding. I make the hard boiled egg recipe and use black cocoa. It gives me that Oreo flavor. I will sometimes make it into pudding pops in the freezer.
I have to agree 100% with you. On what it takes to get keto certified. I have much respect for the organizations. Originators but so many things I thought were nowhere near keto have had their approval.
It's probably one of the first things I ever learned to make in the kitchen and my mom trusted me with a hand mixer (though I don't think I did much to earn that trust).
I do like pudding generally. I make the avocado based one when a craving hits me. I would really like a butterscotch one, that is a comfort food from my childhood. Not this product sadly. Always nice to have Courtney as part of the review!
I think a lot of people (like me) buy the Simply Delish pudding to use in recipes like Ninja Creami ice cream. I would never eat it straight. Actually the starch has been a little off-putting to me, and I've minimized my use of it because of that. Interesting that your blood glucose response was so stable; I'd guess the whipping cream helped a lot.
That’s why I’ve been curious about this brand of pudding. I am currently using the very, very dirty Choc Zero hot cocoa mix that I didn’t like as a beverage (too cloying). It only takes a tablespoon for 48 ounces of base, for which I use Maria Emmerich’s egg pudding slightly modified. For my vanilla and strawberry flavored ice cream I use collagen peptides instead of pudding mix. I can’t recall where I got the idea, but it works great! When the Choc Zero is gone I will use the collagen for the chocolate too.
I have some of these in the pantry. Oddly, for a grown adult, chocolate pudding is one of my favorite things .... I used to be so happy when the Chinese buffet had it! Cafeteria pudding, yay! 😂

According to my search to find out what kind of starch is used in Delish keto pudding, it simply said that it’s cornstarch. The Delish website says “starch from maize”. They also say: “Yes, some pudding flavors do contain Dextrin. We use sugar-free Dextrin in our products derived from corn. Banana, Strawberry, and Vanilla Pudding contain Dextrin. Chocolate Pudding does not contain any Dextrin. “ As I dislike that cooling effect of erythritol, I doubt I will be adding this to my list of desserts. Thanks for testing it anyway. 😊
The fact that starch is the first ingredient, which means it's the main ingredient, would immediately make me say 'no' to this product. In fact, it already did long before this video. Your review stating that the erythritol effect is so pronounced just reinforces my decision to avoid this product like the plague. I can't stand the taste/feel of erythritol, and the fact that it crystallizes when cold is another turn-off. I would simply make homemade pudding, using almond milk and eggs and my preferred powdered sweetener and cook it on the stovetop if I had an overwhelming desire for pudding. It's not difficult.
Great idea. Growing up my dad always cooked our own pudding. I think as things became available in stores we got lazy thinking it was easier to use a packet. When in fact, it’s probably easier to cook it ourselves. Thanks for sharing.
To make it smoother run the mix thru a fine mesh strainer before you mix it together. I always add espresso powder dissolved in a half tablespoon of warm water to sf chocolate pudding bc it enhances chocolate taste. I make Jello sf chocolate pudding pie for family. Replacing some milk with heavy cream makes it more mousse like but doesn't sound like you'll make it again. Thanks for the taste testing videos!
I use the Simply Delish products and I typically use them with heavy cream and some coconut milk. It works great and is super creamy. I will often use it as a base for ice cream and custards.

It's a bit pricey too. I have made this before but I don't remember having issues with lumps. I was seriously disappointed in the strawberry and butterscotch flavors.
I love pudding, but I make my own, homemade on the stove. I use Victoria's Keto milk, eggs, allulose and cocoa. It is so creamy and yummy. I love the texture. I adapted a conventional recipe I had. Or sometimes I make boiled egg pudding.
I don’t use pudding mixes for pudding so much as I use it as an ingredient. Like cheesecake pudding mix blended with half & half or heavy cream, and cream cheese as a no bake cheesecake dessert. Or added to ninja creami ice creams as a flavoring & stabilizer.
Given the reasonable glucose response, I'd say this product would be okay as a periodic low carb dessert - IF it tasted better and had a better texture. The texture really reminded me of when you accidentally put to much xanthan gum into a sauce. That starch as a first ingredient, though, really makes me wonder how low the standards are to get a product "Keto Certified".
Years ago, when I first started with alternative milks Simply Delish was not very available so I played with the instant/cold application modified starches (not the ones that need to be cooked) to further thicken Royal and Jello brands and there is not the same proteins to bind with. Also to make moderately low carb mock pies to get a clearer gel (Ultra Gel), it is also the type they use to make standard instant puddings. Simply Delish uses dextrin and potato starch as thickeners and some type of vegan emulsifier. Now I add a little guar gum or xanthum gum so I can use 2 cups of alternative milk with Simply Delish and/or make it with heavy whipping cream. Using only 1 1/4 cup of alt. milk will have a too strong flavor and sweetness (and associated cooling effect). The chocolate has the worst texture since cocoa powder does not incorporate easily. It is definitely cleaner to make a homemade cooked pudding with eggs but one slip and you have dessert flavored scrambled eggs!
Simply Delish also makes Jello. Black Cherry is our family's favourite! It also makes a great parfait layer... see my previous comment under this video for more parfait ideas using this pudding (but note that chocolate is their weakest flavour and all other flavours better than that! Banana is my fav!)
The BEST way to mix that is to just use a hand whisk because that short wait time using the electric mixer gave you that time that then let it not mix up! I’d not try this because I don’t want to die if this is using Tapioca starch!!
I was glad to see you do a video on this particular item. I have looked at several times, I have almost ordered it. I am a type two diabetic, however, it is controlled with my keto lifestyle, so I think that there’s a possibility that it would spike my blood sugar.but I would like to find a recipe, that’s easy where I could make a chocolate, or vanilla pudding.
I like their pudding, though I find that I have to add cocoa powder to the Chocolate, it's a bit bland on that front. I use Fairlife whole milk. I haven't tried Butterscotch yet, and am hoping to see a Pistachio. The Jello brand has that wonderful 1st two ingredients as you mentioned.
I use this pudding mix and also the Jell-O pudding mix as a stabilizer for when I’m making a moose or whip cream and I use actually use the thick canned coconut cream with a little vanilla and a little some sugar, cocoa powder and 2 to 3 tablespoons of the pudding mix to stabilize it and it comes out great! Since the pudding mix is such a small amount, mixed in with three cans of coconut cream it doesn’t really spike my blood sugar and I am a type two diabetic. I’ve never made it as a pudding, just a stabilizer in both the Jell-O, and this keto pudding mix both work for making whipped cream, or a thick chocolate mousse.
I bought a box of the strawberry pudding because it was in the reduced bin but haven't made it. I was trying to come up with a way to stretch it to cut the carbs more and you might have solved that problem with blending it with whipped cream or whipped coconut cream. With the problem Courtney had making it smooth I'll mix mine up in the blender instead. Using a high protein non-dairy milk should allow you to mix it with 2 cups of milk. I don't like the ingredients of unsweetened Ripple brand but it is a high protein product in addition to soy milk. I don't use them but Jell-O used to say on their packages to reduce the amount of milk if using non-dairy milk too. I really like the gelatin/ "Jell-O" versions but not prepared as directed. I use the powder to add color and flavor to other things or to make the "salad" my mom made with cottage cheese, whipped cream and dry gelatin. She used canned pineapple but I use fresh berries to keep it Keto.
So glad you and Courtney reviewed this pudding mix. I plan to buy some, not to eat as pudding, but to use in various recipes I've seen with Jello SF pudding, which I won't use because of the maltodextrin. Since it didn't spike your blood sugar I'll assume it is ok for me to use. I'm not diabetic and don't know if I have any other insulin issues. Did you eat the entire bowl of pudding?
I grew up on tapioca pudding, it was a staple dessert in our house. I have not had pudding for about 6 years. I am more of a pie dessert person. Do you have a keto friendly pie recipe?
2 recipes we use simply delightful for: party parfait buffets! people create their custom parfaits in wine glasses with options like multiple flavours of pudding, keto-meringue-fluff, berries, nuts, SF chocolate chips, coconut flakes, etc. Fun activity and non-keto people love it! next, I make a high protein pudding mixing hard boiled eggs + coconut cream + pudding powder in a food processor. I have not tested this with non-keto people... there's never any leftover! haha!
I almost forgot! Another great parfait layer is the simply delish jello made in silicone mini ice cube trays! once set, push the jello mini-cubes into a bowl to be spooned into a parfait layer! it is pretty AND adds great flavour and a new texture within the other layers!
I used half of this package with 8 oz cream cheese, a can of nestle crema table cream, 1/2 cup powered sukrin, and 1 tsp vanilla, then combined it with already whipped heavy cream. Refrigerate. Eat. It was not too bad, but the stevia was dominant.
My mom used to make homemade chocolate pudding when I was a child. It was WAAAAAY better than the Jello brand. Of course, I haven't eaten pudding in decades!
The erythritol would do me in if not others in the room with me😊 My mom made puddings-rice, bread, and chocolate. In the old days, it took a fair amount of time to make them. Puddings were probably cheap desserts. I have to admit I still like these puddings, but I rarely make them. Having been raised on a farm, my father having owned a bakery, and my mother a cook in a restaurant, I love a mountain of potatoes swimming in gravy and everything that would come out of a bakery! Sadly, in trying to be keto, I live with 8 people that aren’t.😊
I like pudding but it's been a long time since I have had it. Steve, next time you are at Kroger go to the pudding/Jello section in the cooler. My favorite thing is the 8 pack Sugar Free Parfaits. It comes in lime, orange, and strawberry. Those are a great treat for me. Also at Kroger I get the Zero Sugar Reddi Whip to top it with. I am sure your home-made cool whip is better though.
Use 1cup plus 5 or 6 ounces heavy whipping cream in place of milk pudding gets really thickk. Really good. Can make keto brownies and use for crust of a pie by crumbling part of cooked brownies and adding couple Tablespoons melted butter and couple Tablespoon sweetner. Press brownies mix into pie pan sides and bottom and bake crust at 350 for 8 minutes. Let brownie crust cool. Spread pudding mix in crust and let chill in fridge. Very very yummy. I use Victoria's keto kitchen magic brownie recipe.
Simply Delish Banana Yogurt Pudding w/ Highkey Vanilla Wafers recipe: Put all the ingredients in a mixing bowl and blend with a hand mixer or whisk thoroughly with a spoon: 2 Tsp dry Simply Delish Vanilla Keto Instant Pudding mix powder (aprox 1/8 of the package), 1/2 Cup Ratio Vanilla Yogurt, 2 Tablespoons (or 1/8 Cup) Premier Vanilla High Protein Shake, 1/2 Tsp of Molina Mexican Vanilla Blend, 1/2 Tsp of McCormick Banana Extract. . Spoon into a serving dish, insert 6 Highkey Vanilla Wafers between the mixture and the sides of the dish. Chill for 5 minutes in the freezer or refrigerator. Top with Sugar Free whipped cream if desired. Enjoy!
I used to get their banana flavor pudding mix years ago, I don't remember it having that strong erythritol taste. Maybe the chocolate one is stronger or something
Chipmonk baking uses a 9 to 1 ratio of allulose to monk fruit and that seems to work well. I think most companies stick with erythritol because it’s cheaper and less worry about supply issues.
I also looked at the ingredients and decided against it. I do use their jelly packets as the base to make keto gummies and they're great. I much prefer them over using an electrolyte drink like BAI, or even the tea-based ones. Texture is also very good, and letting them dry standing up in the refrigerator for a week makes them a dead-ringer for regular gummies.
@@SeriousKeto Like Jello, they call them "Plant-Based Jel". Some stores carry them in the pudding/Jello section, but usually only a few flavors (strawberry/orange/raspberry). They have more that you can order on their site and bundle them for a better price. I prefer the peach, lime, and black cherry. They also have an unflavored one if you wanted to add your own flavoring.
Yes I also bought the banana and vanilla the Jello is very good too I think I had 4or5 different kinds from . I never cared too much for pudding when I was younger but the Jello I liked a lot so happy to find a substitute 🤗
At least for sugar free Jell-O brand, the first two ingredients are corn starch and maltodextrin. So many people, unfortunately, see the words "sugar free" and think that means "good for keto".

I always add espresso powder dissolved in a half tablespoon of warm water to sf chocolate pudding bc it enhances chocolate taste. I make Jello sf chocolate pudding pie for family. Replacing some milk with heavy cream makes it more mousse like but doesn't sound like you'll make it again. Thanks for the taste testing videos!

I use the Simply Delish products and I typically use them with heavy cream and some coconut milk. It works great and is super creamy. I will often use it as a base for ice cream and custards.

I buy this periodically and mix it in cashew milk and make a ninja Creami ice cream. I don’t use the whole package. One package could make 3 Creami’s

It's a bit pricey too. I have made this before but I don't remember having issues with lumps. I was seriously disappointed in the strawberry and butterscotch flavors.
I love pudding, but I make my own, homemade on the stove. I use Victoria's Keto milk, eggs, allulose and cocoa. It is so creamy and yummy. I love the texture. I adapted a conventional recipe I had. Or sometimes I make boiled egg pudding.
Sounds tasty, but I don't crave pudding enough to put in that sort of effort. 🙂
I don’t use pudding mixes for pudding so much as I use it as an ingredient. Like cheesecake pudding mix blended with half & half or heavy cream, and cream cheese as a no bake cheesecake dessert. Or added to ninja creami ice creams as a flavoring & stabilizer.

Given the reasonable glucose response, I'd say this product would be okay as a periodic low carb dessert - IF it tasted better and had a better texture. The texture really reminded me of when you accidentally put to much xanthan gum into a sauce.
That starch as a first ingredient, though, really makes me wonder how low the standards are to get a product "Keto Certified".
Years ago, when I first started with alternative milks Simply Delish was not very available so I played with the instant/cold application modified starches (not the ones that need to be cooked) to further thicken Royal and Jello brands and there is not the same proteins to bind with. Also to make moderately low carb mock pies to get a clearer gel (Ultra Gel), it is also the type they use to make standard instant puddings. Simply Delish uses dextrin and potato starch as thickeners and some type of vegan emulsifier. Now I add a little guar gum or xanthum gum so I can use 2 cups of alternative milk with Simply Delish and/or make it with heavy whipping cream. Using only 1 1/4 cup of alt. milk will have a too strong flavor and sweetness (and associated cooling effect). The chocolate has the worst texture since cocoa powder does not incorporate easily. It is definitely cleaner to make a homemade cooked pudding with eggs but one slip and you have dessert flavored scrambled eggs!

She is not. That ring is a fitness tracker and really has nothing to do with keto. That said, a lot of the meals she makes are bordering on carnivore.
Simply Delish also makes Jello. Black Cherry is our family's favourite! It also makes a great parfait layer... see my previous comment under this video for more parfait ideas using this pudding (but note that chocolate is their weakest flavour and all other flavours better than that! Banana is my fav!)
This brand is mentioned often on Ninja Creami FB pages as an ingredient for thickening protein ice cream in small amounts like 2 Tbls..
The BEST way to mix that is to just use a hand whisk because that short wait time using the electric mixer gave you that time that then let it not mix up! I’d not try this because I don’t want to die if this is using Tapioca starch!!
If a product mixes poorly because of a few seconds of wait time, I’d say the problem is with the product, not the mixing method.

I was glad to see you do a video on this particular item. I have looked at several times, I have almost ordered it. I am a type two diabetic, however, it is controlled with my keto lifestyle, so I think that there’s a possibility that it would spike my blood sugar.but I would like to find a recipe, that’s easy where I could make a chocolate, or vanilla pudding.
I like their pudding, though I find that I have to add cocoa powder to the Chocolate, it's a bit bland on that front. I use Fairlife whole milk. I haven't tried Butterscotch yet, and am hoping to see a Pistachio. The Jello brand has that wonderful 1st two ingredients as you mentioned.
I use this pudding mix and also the Jell-O pudding mix as a stabilizer for when I’m making a moose or whip cream and I use actually use the thick canned coconut cream with a little vanilla and a little some sugar, cocoa powder and 2 to 3 tablespoons of the pudding mix to stabilize it and it comes out great!
Since the pudding mix is such a small amount, mixed in with three cans of coconut cream it doesn’t really spike my blood sugar and I am a type two diabetic.
I’ve never made it as a pudding, just a stabilizer in both the Jell-O, and this keto pudding mix both work for making whipped cream, or a thick chocolate mousse.

I bought a box of the strawberry pudding because it was in the reduced bin but haven't made it. I was trying to come up with a way to stretch it to cut the carbs more and you might have solved that problem with blending it with whipped cream or whipped coconut cream.
With the problem Courtney had making it smooth I'll mix mine up in the blender instead. Using a high protein non-dairy milk should allow you to mix it with 2 cups of milk. I don't like the ingredients of unsweetened Ripple brand but it is a high protein product in addition to soy milk. I don't use them but Jell-O used to say on their packages to reduce the amount of milk if using non-dairy milk too.
I really like the gelatin/ "Jell-O" versions but not prepared as directed. I use the powder to add color and flavor to other things or to make the "salad" my mom made with cottage cheese, whipped cream and dry gelatin. She used canned pineapple but I use fresh berries to keep it Keto.
I suspect I won't be making it again, but thanks for the tips if I do.
So glad you and Courtney reviewed this pudding mix. I plan to buy some, not to eat as pudding, but to use in various recipes I've seen with Jello SF pudding, which I won't use because of the maltodextrin. Since it didn't spike your blood sugar I'll assume it is ok for me to use. I'm not diabetic and don't know if I have any other insulin issues. Did you eat the entire bowl of pudding?

2 recipes we use simply delightful for: party parfait buffets! people create their custom parfaits in wine glasses with options like multiple flavours of pudding, keto-meringue-fluff, berries, nuts, SF chocolate chips, coconut flakes, etc. Fun activity and non-keto people love it! next, I make a high protein pudding mixing hard boiled eggs + coconut cream + pudding powder in a food processor. I have not tested this with non-keto people... there's never any leftover! haha!

I almost forgot! Another great parfait layer is the simply delish jello made in silicone mini ice cube trays! once set, push the jello mini-cubes into a bowl to be spooned into a parfait layer! it is pretty AND adds great flavour and a new texture within the other layers!

I used half of this package with 8 oz cream cheese, a can of nestle crema table cream, 1/2 cup powered sukrin, and 1 tsp vanilla, then combined it with already whipped heavy cream. Refrigerate. Eat. It was not too bad, but the stevia was dominant.

The erythritol would do me in if not others in the room with me😊 My mom made puddings-rice, bread, and chocolate. In the old days, it took a fair amount of time to make them. Puddings were probably cheap desserts. I have to admit I still like these puddings, but I rarely make them. Having been raised on a farm, my father having owned a bakery, and my mother a cook in a restaurant, I love a mountain of potatoes swimming in gravy and everything that would come out of a bakery! Sadly, in trying to be keto, I live with 8 people that aren’t.😊

I like pudding but it's been a long time since I have had it. Steve, next time you are at Kroger go to the pudding/Jello section in the cooler. My favorite thing is the 8 pack Sugar Free Parfaits. It comes in lime, orange, and strawberry. Those are a great treat for me. Also at Kroger I get the Zero Sugar Reddi Whip to top it with. I am sure your home-made cool whip is better though.
I like the refrigerated black cherry Jello snack cups. The ingredients aren't the greatest, but they're better than the boxed mixes.
I always loved pudding, but find making a mousse with heavy cream and some kind of flavoring or cocoa powder is good.
I have used it and found it to get runny after refrigerated.
Use 1cup plus 5 or 6 ounces heavy whipping cream in place of milk pudding gets really thickk. Really good. Can make keto brownies and use for crust of a pie by crumbling part of cooked brownies and adding couple Tablespoons melted butter and couple Tablespoon sweetner. Press brownies mix into pie pan sides and bottom and bake crust at 350 for 8 minutes. Let brownie crust cool. Spread pudding mix in crust and let chill in fridge. Very very yummy. I use Victoria's keto kitchen magic brownie recipe.

Simply Delish Banana Yogurt Pudding w/ Highkey Vanilla Wafers recipe: Put all the ingredients in a mixing bowl and blend with a hand mixer or whisk thoroughly with a spoon: 2 Tsp dry Simply Delish Vanilla Keto Instant Pudding mix powder (aprox 1/8 of the package), 1/2 Cup Ratio Vanilla Yogurt, 2 Tablespoons (or 1/8 Cup) Premier Vanilla High Protein Shake, 1/2 Tsp of Molina Mexican Vanilla Blend, 1/2 Tsp of McCormick Banana Extract. .
Spoon into a serving dish, insert 6 Highkey Vanilla Wafers between the mixture and the sides of the dish. Chill for 5 minutes in the freezer or refrigerator. Top with Sugar Free whipped cream if desired. Enjoy!

I used to get their banana flavor pudding mix years ago, I don't remember it having that strong erythritol taste. Maybe the chocolate one is stronger or something

Chipmonk baking uses a 9 to 1 ratio of allulose to monk fruit and that seems to work well. I think most companies stick with erythritol because it’s cheaper and less worry about supply issues.

I love pudding but I never eat it lol. I do use the S/F pudding mixes to make desserts though.
I like pudding, but really haven't had it after changing up my eating. The closest I've come is chia seed 'pudding' (chia seeds in coconut milk).
Same. Or just adding 1/2 tsp of tara gum to Keto Chow.
I also looked at the ingredients and decided against it. I do use their jelly packets as the base to make keto gummies and they're great. I much prefer them over using an electrolyte drink like BAI, or even the tea-based ones. Texture is also very good, and letting them dry standing up in the refrigerator for a week makes them a dead-ringer for regular gummies.

@@SeriousKeto Like Jello, they call them "Plant-Based Jel". Some stores carry them in the pudding/Jello section, but usually only a few flavors (strawberry/orange/raspberry). They have more that you can order on their site and bundle them for a better price. I prefer the peach, lime, and black cherry. They also have an unflavored one if you wanted to add your own flavoring.
Also, I just use them as a base, so I add gelatin, allulose, citric acid, vitamin c, mct oil, and a little lemon or lime juice.

Yes I also bought the banana and vanilla the Jello is very good too I think I had 4or5 different kinds from . I never cared too much for pudding when I was younger but the Jello I liked a lot so happy to find a substitute 🤗

At least for sugar free Jell-O brand, the first two ingredients are corn starch and maltodextrin. So many people, unfortunately, see the words "sugar free" and think that means "good for keto".
