its because its raster graphics, curves work better in cad type software. curves in this are always a combination of points that are sharp, in cad its math functions that form the curves
i personally would take a plane then apply a curve modifier to it and also subdivise the plane if you want i can explain it to you better on discord bro

If the curves are just a little jank you can apply a subdivision surface modifier to smoothen them out. Curves are incredible
If you enable the 'edge snapping' feature, it may be slightly less tiring.
