Can we use what flour instead of maida? Also for the dream cake, can i double the quantity mentioned by you and make sponge for 2 cakes at once? Will the result be good? Please help
Wheat flour won't give you that crisp and tender texture for cookies you do not want gluten.. and yes for dream cake.. you can double and make 2 cakes at a time

2nd time chilling is with the baking tray ? Or we chill the cut cookies in another tray nd transfer to the baking tray when putting to bake?
Do you prefer cassia cinnamon or ceylon?
