Jiffy Corn Casserole Recipe / Click on Show More
1 can whole corn (drained)
1 can cream corn
1 stick butter (melted)
2 tbsp sugar
2 eggs beaten (room temp)
8 oz of sour cream
1 box of Jiffy Corn Muffin Mix
1/2 tsp salt & 1/2 tsp pepper
Put in 2 quart casserole dish (spray your dish)
Bake at 350 degrees for 1 hour

I love watching him and Sheila. I am so saddened to hear that he is no longer with us. What a huge loss but what a huge blessing that we have all these amazing videos of him. Yes Stephanie I think he would be proud. He managed to make 307 video's before he past. I didn't want to quit so i asked Jennifer if she wanted to come on board with this and that was the best move ever. I think Steve would agree. Thank you for such a lovely comment. He loved his viewers. :)

Your recipe is the same as my friend's except he uses cream cheese instead of sour cream.
He also uses shoepeg corn... which is very sweet. I enjoy your videos.
This was pretty good but next time I would definitely leave out the extra sugar because the mix has enough sugar for me. Also, no salt and pepper. Just my preference.

We call this Doc Bark's corn casserole... As I understand he got 3rd place for a side in KC Bar-b-que. He went for his brisket that did not show so well.

First time visiting you. Wondering if this recipe turns out moist. He indicated it was almost like cake so is it more like cornbread? Or is it more of a vegetable side dish?
Yes it does Susan! It’s moist and a touch of sweet.You can use as a side dish. You can slice it or take a big spoon and dip it out.
