Food52, please consider making Dale a regular. He explains everything clearly and concisely. He doesn't back down from encouraging the use correct ingredients while still being likable.

dry sherry is the closest but any rice wine (that isn't mirin) will work in a pinch just that they lack flavor. also, taste for salt because cooking shaoxing wine has salt mixed in.

Food deserts do exist in America, in which people have no car and no grocery store within a mile of their home (let alone a specialty Asian market.) If someone can't find Shaoxing wine, maybe you should have some empathy and offer an alternative instead of exclaiming they're not trying hard enough.
I found it refreshing that he kept to his recipe and didn’t offer an alternative because there isn’t. Even if you look online there isn’t a perfect substitute for it without altering the recipe altogether. He offered alternatives for things you could switch out for (ie: using lemon but can use lime or sherry vinegar) but those people could simply order shaoxing wine online like they suggested 👍🏻 not every recipe has to cater to everyone in the world either, you are free to pass on it if you can’t make it.
@@aimeekil8436 I also appreciated the response! This wouldn't be the same recipe if it were made with spaghetti or sherry vinegar. As a person in an immigrant family, I find it frustrating how quick some recipe writers can be to white-ify the dish. Respect the food for what it's meant to be!

I made this and it was amazing! I used a vegan fish sauce substitute and next time I might add bok choy or some other vegetables

What can I use in place of the oyster sauce? I realize that ‘the thing’ that ‘makes it’ but I can’t use that in my kosher kitchen.

Looks great. Doesn't need all the health destroying salt laden added ingredients. Ginger, garlic and hazelnuts will do fine alone.
