If you're emailing from a browser you can install a plugin called "Speech Recognition Anywhere", but it is not free. Alternatively, you can use the built-in Windows Speech Recognition software. It will dictate in a text box and then you can click a button to have it "insert" your text into the email. I've also used Dragon, but it is not free and requires training.
