My course starts in January 2021 and applying for jobs in 2021 in September won't be too long? Because only in 2022 September I will be getting a job if I apply in 2021 sept. Won't that be too long?
These recruitment are for big companies only. They have this regular recruitment cycle. Just like 20% of the companies in Uk will go through this cycle.
All other companies will have opportunities throughout the year.

Can I do placement year which starts in sept 2021 if I start my course in jan 2021 . I'm going to msc in university of Leicester
It depends on the univ. Some universities give the placement yr after 1 yr. some universities do 6 months course and then 1 yr placement and then 6 months course.
So it’s better to discuss it with your respective university student services
I had a question , so if my undergraduate is kinda in IT engineering and my master's course is MSc Financial Technology , so like when I do my job search I'll be at a very early stage in my master's course and so I will be judged on my undergrad performance etc etc right ?... So like how does that work.
You can add your courseworks to your CV and only master's doesnt get you a job you should have the skills required for the field. So before applying for the jobs try to improve your skills in that field.
There are jobs in engineering related fields for Indian engineers.

You can google it like top 100 companies in food industry or companies in food industry in Uk.
You check the company name in tier 2 sponsorship list to find whether they are sponsoring or not.

Actually for Uk companies u can apply for graduate roles. But for big international companies they have a criteria like 0 to 2 yrs experience only at that time you can’t apply to those roles.
You can apply for grad roles in Uk companies and experienced (junior & intermediate) roles in Uk based and international companies too

Only big companies has the procedures that I mentioned in the video and you cannot apply for a graduate position to them since you are experienced.
All other companies recruitment procedure are simple like send your CV and if selected come for interview.

If your course is only 1 yr without placement yr then you can extend ur visa only by getting PSW.
If your course is 1 yr plus placement yr then if you take an internship you can extend the visa for 1 more yr without taking PSW.
