  • Our pressure fryers are designed to cook product under pressure to seal the moisture and too cook faster at lower temperatures. Pressure is regularly released by the deadweight valve to maintain an even and optimal amount of pressure in the frypot; however, lack of care and/or maintenance can lead to build up in different components of the fryer causing pressure not be released during or at the end of the cooking cycle.

    What if you clean everything solenoid steam box drain tube and the tube going across the back, and it's still slowly to release pressure? I even took the steam box apart and cleaned the tube inside with the holes in it. It's a henny penny computron 600 . I work for a grocery store food market( we have 17 stores )and we have henny penny fryers mainly in our deli's ,I'm a tech also. This is on a fryer I was working on yesterday

      Good question. Depending on the cook cycle and the amount of moisture in the product, you should have anywhere between 30 seconds and one minute to release pressure if the plumbing from the frypot through to the condensation box is fully open to its 1/2" diameter. If this is taking longer, then the tubing or solenoid valve partially obstructed and not open to its full 1/2" diameter.

    Hi Sir,
    My Henny Penny's main burner is not firing? Pilot is working but main burner is not getting fire? Any advice please?

      You probably didn't turn the small gas control back to the burner position but you probably worked that out now lol.
