I just made your recipe with onion although my pan was too big. It is so hard to find a 10" pan. I learned the trick to cook on a low heat and it came out almost perfect. I need more practice. Delicious. LOVE your channel!

I almost married someone while there but Franco was dictator and because I was not Roman Catholic, we could not marry. Wish I had stayed in Spain.. Tortilla de patatas was one of my favorites as a kid living in Spain~ and you are correct, it was a great breakfast, lunch or supper too. Made with olive oil, it was, and is, a feast! What a beautiful mound of patatas you have there sizzling .... excellent tortilla, Albert! Picture perfect. One large wedge please with a side of cold, braised bacalhao. Deliciousness from my youth, brother!

Great video! I been making Tortilla Espanola for about 30 years for my Spanish wife here in the USA. Fun to make and of course eating them as well with a nice glass of Rioja wine. One thing,...I do coat the flipping plate with a layer of olive oil which helps slide the tortilla back into the pan on the first flip.

Every time I return to Spain, a pincho de tortilla is always my first go-to food. That, with a hunk of great Spanish bread, and I know that I'm "home". Great plate flipping, by the way. I usually do mine over the sink, just in case.
nothing wrong with flipping it over the sink, in the past I just to flip it over the counter with a large plate below just incase anything spilled, much love and happy saturday to you!
This looks great ! When I make this (also learned it from a Spanish colleague), I cut the potatoes in small cubes and fry them in hot oil, like french fries. It takes less time than to bake them I think. I always fry some onions too and put everything into the egg mixture and then bake it like you do ! Long time since I've made this ! Must do it real soon, cause I love it !!

I'm the main cook in our house but my wife is Spanish and she owns this dish like a boss. Can there be any dish in Spain more iconic than Tortilla de Patatas? The best Spanish food comes from poverty and this is one of those dishes. It punches massively above its weight. Some do it without but It needs the onion if it's going to be properly good.
If you add onions it is called tortilla Española, which is amazing, but this one without the onions is the typical one served at bars, known as tortilla de patatas, thanks for the comment :) much love!!

Good video. Needed to see how to cut the potatoes evenly. I add sweet onion to mine for more flavor, but you are right. It is a delicious and simple treat. My only issue is I have a hard time flipping the pan if I put too many potatoes in it.
It takes some practice, but I do recommend using a plate that just fits inside the pan, makes the flip so much easier, thanks for the comment :) much love

It makes flipping much easier. Don't flip before only 2-5mm of the surface is liquid. Use medium low heat, so you can wait longer without burning the egg.
Nice video. I usually add some onions. When I lived in Spain this was simply called Tortilla Espanola. The only place I've heard it called Tortilla de Patatas is in Latin America. Perhaps it's a regional thing, even within Spain.

Thanks for the updated version of this recipe but although very simple, it's still hard to master! It never ends up how you do it. Yours is absolutely perfect! I find the potato pieces fly out my 24 inch pan when stirring. What size is your pan? Can you just cut the potato up really smaller then how you have done it? When putting the mixture back in the pan, should you re-oil the pan with 1/3 cup oil or not? I'm just trying to work out where it's going wrong as I follow the instructions to the letter but still ends up a messed mixture that goes everywhere when you try to flip.
you can cut the potatoes into any size you desire, as long as they are fully cooked through it doesn´t matter, don´t re-oil the pan when adding the mixture back in, just remember that every pan and stove top heats differently, if your mixture is not fully cooked try cooking for a longer time before making the flip
Spain on a Fork yes I can try that. My stove has 4 different sizes on it, two small and two much larger ones. I cook everything on the smaller one. Would it be better to cook on the larger one for these recipes or is everything ok on the smaller ones?

Recently, I've started experimenting with Tortilla Española to rave reviews from my wife, my parents, and my sister. I notice, though, that you choose not to use onions in your recipe. Given that you use onions so often in other recipes, I'm interested in knowing why not here. I am looking forward to trying your onion tortilla - that looks great. Unfortunately, my wife isn't a big onion fan, so it'll probably be a mini just for me.

Just put it on a cast iron pan and stick it in the oven. Add some onions and smoked paprika too.
I also make a mayo/garlic sauce to go with it.

Given that you use onions so often in other recipes, I'm interested in knowing why not here. I am looking forward to trying your onion tortilla - that looks great. Unfortunately, my wife isn't a big onion fan, so it'll probably be a mini just for me.
The original tortilla de patatas does not have onion, the version with onion & potato is called tortilla española :) much love!
