I made this today and as with all Claudia's recipe's, it is delicious! One word of caution... If you print off the recipe, it says to add 4 tsp of salt into the Picadillo... for me, that amount should be reduced to 2 tsp and then check for taste (like Claudia says in the video), as with the cheese and the beef broth it is plenty salty. Also, from start to finish, including "Prep Time" this recipe took me 3 hours and 15 minutes to make. Definitely worth it and I am not complaining, but wanted to note this. 🙂 I put some Cilantro Lime Crema Sauce on top that I got at Costco. Yummy!! It took some time so I made the first part of all the different parts; meat with vegetables and the sauce the night before. Then to put everything together including frying the tacos was 1hr and 15 minutes and that includes baking.
I tried this recipe tonight and it was definitely a hit! I usually use the can sauce because enchiladas is something that I make when I only have a bit of time. I think it’s worth going the extra mile and doing it this way! My entire family loved it! My 9 year old daughter was motivated to help me make this and was amazed at how delicious it was. TravelingRobert always makes picadillo while on the road . I remember my mom making a version of picadillo growing up but she called it goulash haha. It was delicious. She added peas and or corn to it. Always served over mashed potatoes

You could always replace the corn tortillas with almond flour tortillas, which would cut way down on the carbs, and just eliminate the potatoes, or replace them with nopales, calabacita or zucchini.

Wow! I made this twice this week and everyone absolutely loved the dish. I found the right peppers and cheese. When making the sauce it did not blend all the heated peppers so I put them in a colander and drained them to separate out any skins extra. The sauce was delicious and much better than store bought enchilada sauce. Thanks for this recipe!

My mom's version of Goulash was made with elbow macaroni and ground beef in a sauce made with stewed tomatoes and chili powder.
