INGREDIENTS:
- 1 kg salted cod fish ( you can use any kind of fish fresh or frozen)
- 1/2 lemon
- Water
For the batter
- 1 cold beer (330 ml)
- a pinch of baking soda
- 5-6 tbsp flour
- 2 tbsp cornstarch
For the garlic potatoes dip (skordalia)
- 1 kg potatoes
- water (700 ml)
- 2-3 cloves of garlic
- 2 tbsp apple vinegar
- some lemon juice
- 40 ml olive oil
- some salt

The best is to use the already desalted cod, fresh or frozen
Salted gives you the best texture and flavor. I de-salt it in water for three days before.
