    I make my own fries. Unpeeled potatoes cut and rinsed to remove extra starch. Cook over medium heat with a bit f good water until proper softness. Drain and put in a hot pan and drizzle with a good oil over medium high heat and cook until brown. Not greasy and not too salty!

    French fries did originate in France. Belgium didn't even exist until 1830. The correct rumor was that the soldiers of WWI called them French Fries - and even that was false.

    Inn-N-Out are not a good option because they don't cook then right. You have to double cook fries. First a blanch at 325 to get them soft, then a high cook at 375 to crisp them. Frozen fries are pre-blanched so they only cook to crisp. Inn-N-Out cuts fresh potatoes into hot oil, they don't pre-blanch. That's why they taste bad.

    If your fry’s have anything other than potato, salt, and fat listed as ingredients and they are not spices. Buy something different. Or better yet cook them from fresh potatoes at home.
    Two ways to cook
    Deep fry method
    Cut potatoes into desired shape.
    Deep fry in small batches in low temp oil (275-300 degrees F)
    Cook time based on thickness
    Shoe string = 3-4 minutes
    Steak or British chips = 5-7
    The fry’s should not be browned at this point.
    Raise heat of oil to 400 degrees F
    Dump in fry’s and cook till golden brown delicious GBD
    The 400 degree oil will loose heat and drop to 350-375 degrees F
    Where it should be.
    Once GBD. Remove and let drain, season and let cool.
    Method #2
    Bake potatoes the night before then place in fridge over night
    Next day cut into desired shape. Bigger is better as shoestring will not hold up prebaked and you’ll end up with mush.
    Bake or fry until GBD
    Freezing potatoes after baking and cutting makes great quick serve frys. Ready to cook.

    "Les frites" (french fries) are known in France to be a belgian speciality.
    But, truth must be told : in the XVIII century, in France right in the middle of Paris, people were offering french fries to customers on the Pont Neuf (hence the designation "pomme Pont-Neuf" for french fries today in certain french restaurants a bit old-fashioned). Jefferson may have had some french fries on the Pont-Neuf.

    Interesting story about a man named James French who, in 1968, murdered someone and was committed to life in prison even though he requested the death penalty by electric chair. In prison he killed his cellmate to force a death sentence. He was interviewed shortly before the big day. The reporter recounts the following exchange:

      "What?"

    a black man named James hemming brought French fries to America. James was a slave under Thomas Jefferson, but he was a also a slow. While Hemings didn't create french fries (which are known as pommes frites in French), he was the first American to make them in the country. He is credited with also introducing macaroni and cheese, meringue, firm ice cream, and whipped ice cream to America. sad how quickly true history has been erased and forgotten.

    • @johnree6106
      @johnree6106 2 года назад

      He didn't bring them to America while he may be the first person to cook them as slaves were the ones cooking to actually bring them would have to taken the initiative to learn how to make it instead of being ordered to make it. Sorry not everything is about black people. In fact if Jefferson wasn't the type of person to hold parties using said foods it wouldn't be popular in America. And also I wouldn't say that for sure other people have not cooked similar foods just that Jefferson made it popular. And yes black cooks are the one making it but assuming that they brought it is a wrong assumption.

    • @Nackx
      @Nackx 2 года назад

      @@johnree6106 it is a known and documented fact James Hemming brought them to America. never said he invented them, just to educate you further French fries started in Belgium was fried potatoes wedges that looked like fish, and were altered over time. "sorry not everything is about black people" must be some typical white guy who cent handle that half it Americans facts have been lies and you maybe just can't handle that. there was a documentary released recently called "fries" I encourage you watch judging by how uncultured you are and your desire to deny facts simply because you now have google difference is I learned about they things because I've traveled the world and gotten the opportunity and learn unlike you.

    Wrong. The Spaniards brought potato and tomato plants from the Americas but they were used only as decoration. The first to eat the fruits of both plants were the (epi)curious Florentines---they were also the first to deep-fry ANYTHING in Europe! So, as far as originality is concerned, nothing French, nothing Belgian.

    Twice fried fries are NASTY, Gross and tastes revolting to put it mildly. Twice fried fries are an abomination and an insult to the customer.
    That is a lame penny pinching move, take old cold sit there until sold fries , dip them in the oil for about 30 seconds and then try to pass them off as fresh, that should be a felony worthy of jail time and having the restaurant closed down.
    What you see in this video about twice fired fries is pure USDA Grade A Choice BS. Thumbs down for that alone.
