?What is the other rice flour call - not the glutinous rice flour. Instead of white sugar, I think melting rock sugar, or a better (less processed sugar) would alter but improve the taste of the few simple ingredients. I don't know how a brown sugar, or a sugar that is not derived from cane would make these fried balls taste (better or worse?). In the past when/where this recipe was invented, processed white sugar was not readily available. Only the more crude or unprocessed/unrefined sugars were used. Can I use more sugar in these balls for a sweeter taste and not interfere with the end result, other than they are sweeter? Being not in Hong Kong, lotus paste is difficult to find. I would have to make plain balls with no filling.

将拇指放入粉团,不断旋转,捏出空心球,就好似包包子那样转。炸的时候,低油温放入去,边加热边翻动防粘底,等到浮起了再用筛一边轻压一边滚转
