Hi there, I’ve been making tamales for the past few years and every year I seem to find a video to help me get better. I was so pleased with this video. I just had to adjust adding more arina due to my areas humidity level. Masa was perfect! Meat delicious flavor. I will definitely use this method moving forward.

🌴🌺 Thank you!!! I’m going to make these. Reminds me of my grandparents when they made them all together. My mom and her 3 sisters would sit around the table and make all the tamales. Please tell me what I am doing wrong, I decided to make your tamales I followed everything to the tee, everything came out very good except the masa, I did the water test and it did not float so I mix it another 5 minutes tested again and still failed the test, so I looked up why masa does not float one said I was lacking the flour so I added a little more and still did not pass the test so now I am getting frustrated because it’s not floating I had to take a break so two hours later I decide to test again and it still failed so I am mixing again I have the same mixer as you do, so please tell me what am I doing wrong,
Hello i just had a question about your recipe. It's my first time i will be doing tamales on my own and i was asking my family for our recipe, i guess we don't put the tomatillios in the Chile rojo. So my question is because I actually love all your recipes and have tried some my self i love them all! So my question is why do you put the tomatillios is it for better Flavor ? I'm really thinking of just using your whole recipe but everyone is asking why I'm going to put the tomatillios that those are only for the green ones sooo I'm like ok I'll just ask why.

Love your videos! Question. In the Green Chili chicken tamales, the same masa ratios; however, for chicken masa, you used 2 tsp baking powder, and for this masa, 5 tsp. Which is correct? Since it took me forever with my hand mixer, I am thinking more 4-5 tsp?
Ok i made it today, feedback. DO NOT use the 4 cups of broth from the chiles when blending. Made it so bitter. And yes i followed to the T. I researched and it says to use fresh water when blending. Second. Too much liquid for masa. Way more mixing needed. Way more salt in the meat mixture needed. Little bit if tweaking should make it perfect.
Why does this recipe take so long to cook? Other recipes I’ve seen/used only require up to 45. I’m at 2 hours right now with this one and my masa still isn’t ready. I’m so nervous 😰

The best tamale is the day after Christmas or new years, and you warm them up on a comal till the outside of the tamale is just a little burnt. 👌

I’m new to the instant pot world lol, soo I’m still learning here. How do you keep it on lo? After the cooking part is over?
When you say put the pressure valve to steam is that low pressure ? When do you use #2 or high pressure?
Tamales are a super fattening treat.
I only consume them on Christmas day.
Where is your stand mixer from
Claudia how long would you recommend to cook the meat in a crockpot? Or cook for a stove top? I don’t have a instant pot ☺️
Of course!!!! You can cook the meat either way crockpot will cook in high for 4 hours and stovetop will cook in 2 hours 😊
