I know I'm late on this video, but there is so much to do with those potatoes. Potato cakes, you can take a 1/2 of the pack of the meat and make a hash. However, you can take a whole bag of those potatoes and cook them for 1 minute, then bling then and make home style potatoes for breakfast or soups too. New subscriber 😊
If you cook your lentils and add them to hamburger you can stretch it to make taco meat or filling for lasagna or spaghetti sauce. I also make a lentil soup that uses lentils, potatoes, carrots and onions. Bouillon powder or broth. Salt , pepper and coriander and a little garlic. I add a little butter or olive oil to add richness. Also just cut the carrots thin and fry them in a skillet like you do with fried taters as a side dish.
Potatoes: 1Potato2Potato- bake potatoes. Slit potatoes and mash insides, add butter salt pepper,. Put all potatoes on a cookies sheet, top with cooked veggies (broccoli cauliflower carrots, mixed veggies etc). top with cheese. Can also add bacon, diced ham, sliced up deli meat or leftover meat if protein is a must. Grew up eating Potatoes with vegg and cheese when times were tight-very filling meal even without a meat.
If you do up the potatoes mashed with milk butter salt and pepper you can put them in baggies and freeze them after they have cooled. When I thaw them I put them in a frying pan with a lid and cook them slowly. They will get juicy looking but as they warm the magic will happen and they will be as good as before. After they have gotten hot I like to let them brown then flip them over and put cheese on top or just serve them. I have saved many potatoes from the pantry by doing this.
On nights where I don't feel like cooking I bake some potatoes open a can of chili, spoon it on top with cheese, sour cream and onion.. I actually had that tonight. I used an already baked potato I had left over, just reheated it.
Potatoes will store no problem for a month so will just take you through til the next food pantry :) I usually have boiled potatoes with steamed veg and a protein, leek and potato soup, Shepards pie with soy mince, cheesy potato bake, shred them to make hash browns, love potatoes so much 😅
For the most part, yes! We will have to get these used up sooner rather than later because they are starting to go moldy. Since these are "out of date" items that the stores get rid of, we have less of a timeline than normal. Great ideas for the taters!
I love doing baked potatoes smothered in homemade chili. I have several bags of lentils and I add a bit to my chili. Drumsticks are my kids fave and I just put them on a sheetpan and sprinkle some seasoned salt and bake. Leftover chicken you can shred and add to lentil soup.
You inspired me to visit my local food bank again. Today, I went back. I'm grateful I did. Potatoes are good with scalloped or au gratin potatoes. Homemade hashbrowns are always great. Putting them in stew, mashed potatoes, or boiled potatoes.
Chicken salad made wjth chopped apple served on those croissants would be fabulous. Sliced carrot sticks served at meals will utilize some of your haul.
I work at a restaurant. So yes, bake your potatoes. Refrigerate over night then five for cottage fries! Great way to stretch your food. I use lentils to stretch hamburger or sausage. Also chicken and lentil tacos are good. Or do a multi bean soup with chorizo for meat. I wonder if soaking chorizo in milk will draw some heat out. Those carrots are like the deer carrots I buy and can! Also I’d do the catfish as a “tuna salad”
Potato soup 💯and I made lentil Italian wedding soup it was really good, you could add sausage or chicken to that as it has spinach and carrots I think it would be good! ❤great haul though!
@@SodbusterLiving 3 cloves minced garlic, 2 carrots sliced, 2 stalks of celery, drizzle olive oil on pan cook carrots, garlic and celery and 1 can of tomato paste few mins add lentils (I used whole bag but it ended up being too many of them I would do half the bag) 6 cups of water, salt, pepper and Italian seasoning to taste, simmer with lid 40 mins then add in 3 to 4 cups of spinach until wilted and then serve and top with Parmesan cheese! You can add or take away stuff to make it to your tasting it’s very good though!
Baked loaded potatoes would serve as a great meal with a salad. Top with sour cream and butter, canned chili and cheese with chopped onion. It is fabulous!
Great haul!! Chunky fries, wedges, roast potatoes, jacket / baked with toppings, skins, chips - baked in the oven, for cottage / shepherd pies, Bombay potatoes etc. You could do a tandoori style chicken legs served with any bread option. Create a lentil Dahl to dip into bread. You can serve with rice and Bombay potatoes too. Add and takeaway things as needed.
Could make potato gnocchi! I make a layered casserole with sliced potatoes, carrots, celery, onion with raw hamburger on top. Then mix tomato soup and brown sugar and pour over top. Then bake.
Lentil burritos . Mix with hamburger , refried beans and cheese it stretches your meat. I make them ahead and freeze . We like ours cooked in the oven till crispy.
My family is vegan and we love The Korean Vegan's recipe for Gamja Jorim braised potatoes! Super simple and delicious! Also dairy free so your whole family can enjoy! I've made it with and without peppers and it's delicious either way! Stay warm, friends!
@@SodbusterLiving You're welcome! It can also easily be made gluten free. :) Another great dish for a meatless Monday you can try is a vegan Chana Masala! Very simple and filling! (Since you had the chickpeas.) We make it at least once a week and love it. Thanks for all of the videos and being an encouragement to so many! God bless you and your family. 💕
Good morning beautiful friend ❤ You got some really great items! You could do chicken and lentils 1 tablespoon olive oil, 2 pounds bone-in chicken pieces, 1 large onion, finely chopped, 1 small carrot, finely chopped, 2 cloves garlic, finely chopped, ¾ cup dried lentils, 1 (14 ounce) can chicken broth, ½ teaspoon salt, 1 (10 ounce) can tomato sauce, ½ teaspoon dried rosemary, ½ teaspoon dried basil, and 1 tablespoon lemon juice. Heat the oil in a skillet over medium heat, and cook the chicken pieces 5 minutes on each side, or until juices run clear. Remove chicken from skillet, and set aside. Place onion in the skillet, and cook 5 minutes, until tender. Mix in the carrot and garlic. Stir in the lentils and broth, and season with salt. Bring to a boil, cover, reduce heat to low, and simmer 20 minutes. Return chicken to skillet. Cover, and continue cooking 20 minutes. If the mixture becomes too dry, add a little water to just moisten. Stir tomato sauce into the skillet. Season with rosemary and basil. Continue cooking 10 minutes, or until lentils are tender. Stir in lemon juice, and serve warm. Recipe by Lorraine Friberg Published on July 10, 2019 www.allrecipes.com/recipe/80651/chicken-and-lentils/ Just type in chicken and lentil you will get lots of idea!
There is a Mennonite store called Country View in Snover Mi. I think it would be about a 35 Min. drive for you. The prices are great. They sell bulk food as well. Many people from many miles away make the trip.
YES! Life of a Homemaker took me there one day and I found my Gluten Free flour for a fraction of the cost of Walmart. Made my heart sing! When we can set up a good budget and kind of get a feel for what we can do, I'm definitely goig back!
One of my favorite places to stock up. Their frozen pie crusts are the best you’ll ever have. Unfortunately for me, it’s a 2 1/2 drive so I don’t get to go as often as I’d like.
I made baked potatoes last night. Silly me though I would have leftover potatoes for breakfast, but nope, everything was eaten. I did splurge and made bacon crumbles for our baked potatoes 😊 All in all, it was about a $15 meal for our family of 9.
Not sure you got my last comment about peanut butter and dill pickle sandwiches. They work great for snacks or lunch. Sounds gross and yet they are great. I took them to soup suppers at church during lent and everyone loved them. Children love them. Also peanut butter and lettuce sandwiches.
If you have to many potatoes can them they are my favorite thing I canned last year they are already cooked and you can fry them and add scrambled eggs I add peppers, onions, cheese its a favorite we also put ham , sausage or bacon if we have it but I love having my potatoes canned in fact I am going to go buy 40 pounds at aldi this week just to can them up so they are ready when I need them.
I was actually thinking I would need to can some! I did find a local woman needing food badly so I gave her a bag and some milk, but still have 20lbs plus what I already had. May have to do some canning.
Carrot stick and almonds would be a fantastic snack too. I'd chop half those carrots and freeze them, in order to dump them into soups (or smoothies!) throughout the year. I also love carrot oatmeal muffins for breakfast
Just make mashed potatoes and freeze them in a container for the size of your family. I have several in my freezer. Thaw and warm up and maybe add a dollop of butter on top.
If you get catfish again cut it into smaller pieces and coat with flour or cornmeal and shallow fry . Then make fish sliders or fish poor boy sandwiches. Put lettuce , tomato, mayo or tarter sauce . Just whatever you all like on sandwiches!!!!! Good way to use veg needing used or bread needing used . God bless !

@SodbusterLiving I love curry because you can put everything in it. When I was a nanny for an Indian family, grandma would often use drumsticks in her curry for the meat. Lentils are often used in Indian cooking, so it will just bulk it up and you can use less chicken. I usually use some mix of butternut squash, sweet potato, chickpea, zucchini, carrots, and bell pepper in mine. Some form of tomato and Garam Masala are the key ingredients to a good curry, I think. I was actually going to make a chicken lentil curry for a video series I'm doing this week!
Thank you for assisting people with how to expand their knowledge of using food pantry foods. Also for addressing the topic w dignity.
