Why I Roast Asparagus in Hoja Santa Leaves

- Simple goes a long way when the ingredients have chemistry. Asparagus infused with Hoja Santa leaves tastes both surprising and familiar at the same time.

INGREDIENTS
12-15 Asparagus spears
6-8 fresh Hoja Santa Leaves
1 tbsp Coconut Fat (aka Coconut Oil)
1 Lime, halved or quartered for squeezing
Smoked Maldon Salt (or your favorite smokey salt)

INSTRUCTIONS
1) Preheat your oven to 425
2) Place a sheet of tin foil on counter
3) Layer the hoja santa leaves on the foil
4) Layer the asparagus on the hoja santa.
5) Dot or drizzle the asparagus with coconut fat and sprinkle with salt
6) Bundle together into a snug but not too tight parcel. Try to keep the asparagus stacked about 2-3 pieces high. If there are too many layered it can result in uneven cooking.
7) Roast in oven for 15-20 minutes until the asparagus is slightly tender but still a little crisp and a deep green
8) Remove from oven, discard foil and hoja santa
9) Finish by sprinkling smoked salt and a squeeze of lime juice
10) Serve

This is the first time in being a Chef for 30 years that I have heard of this Hoja Santa leaf!! It sounds marvelous. I love tarragon so I bet I would love it. 💚💚💚 nice vid! Thank you! These leaves remind me of 'sea grape' leaves (commonly found in coastal regions or the Caribbean) though I'm not sure how they would taste in cooking...🤣
