Lemon Garlic Roasted Asparagus (Ready in 20 Minutes!)

  • Oven-Roasted Asparagus is coated in a lemon garlic sauce and cooked in a 400-degree oven until perfectly crisp and tender. Serve this low-carb, vegan, and Whole30 dinner recipe for a quick, easy, and healthy side dish.

    INGREDIENTS:
    1 lb. asparagus spears tough ends removed
    1 ½ Tbsp. olive oil or avocado oil
    ½ tsp. salt
    ¼ tsp. black pepper
    1 garlic clove crushed
    ½ lemon juice and zest
    INSTRUCTIONS:
    Preheat oven to 400 degrees.
    Remove the tough ends of the asparagus spears by snapping at the junction where the hard and tender parts meet. Repeat with all asparagus spears.
    In a small bowl whisk together the oil, salt, pepper, and crushed garlic.
    Place asparagus spears on a parchment paper-lined baking sheet.
    Brush garlic oil over all sides of the spears using a pastry brush.
    Bake asparagus in the preheated oven for 11-13 minutes, or until tender and bright green.
    Just before serving zest half of a lemon and squeeze juice over the asparagus. Enjoy!

    i like your tip, of putting the lemon at the end. I usually do it before the oven and sometimes it has a bitter taste... i will give it a try after the oven.... Thanks....

    I use a carrot peeler on the large end after I use a knife and cut off only about 1/2 inch. I peel about 3 inches down to the white. It works so well that I am always asked to prepare them this way

    Oh dear i fucking love asparagus. Lemon juice boosts their flavor sooo much. Only thing, i eat the whole pound to myself. Nobody can enjoy these monsters but me.

      2 tablespoons of olive oil, 1 tablespoon of fresh or jarred minced garlic. coat asparagus.roast in oven.After roasting add half A lemon zest then juice from whole lemon.hope that helps
