I recently bought some asparagus now that it's in season (and on sale lol) and I had never thought to mix it with hard boiled eggs. I'm definitely trying this for lunch today!!
Yum! I like to top my asparagus with a mashed hard boiled egg with lots of melted butter. My (farm girl) mom's version of hollandaise - at least that what she calls it. LOL - just dawned on me "red neck hollandaise! So good!
I fix a steak in a cast iron skillet. Use bacon fat that I save. While steak is resting I throw asparagus in pan with a bit of seasoning. Delicious. Love asparagus. Funny thing is growing up we had asparagus, but it was out of a can and it was terrible. Funny thing is in New Mexico asparagus grows wild all along the irrigation ditches , so we had it right outside of our front door and we never even knew it. .
I’ve never roasted asparagus. I’ve always blanched it in boiling water. What’s the difference in taste by roasting? I will definitely do this next time to try it out!
There's no comparison! I ate it my entire life: steamed. Roasting almost any vegetable brings out all of the flavor, any sugar in the vegetable becomes sweeter, and it is just 10x more flavorful. Kids that will NOT eat steamed asparagus, will eat and like asparagus, same with fresh broccoli! Give it a try-I'll try to remember and come back here in a week or so to see if you tried it!
