Authentic New Orleans Bread Pudding

- This is an authentic New Orleans Bread Pudding, originally from the Bon Ton Cafe in New Orleans. The original calls for a whole cup of bourbon which I think is a little excessive. We've reduced the amount to 1/2 cup which is still strong. You could reduce it further to 1/4 cup if you wanted. The ingredients are: Bread Pudding:
1 loaf French bread, at least a day old, cut into 1-inch cubes (about 6-7 cups)
1 qt milk
3 eggs (large)
2 cups sugar
2 Tbsp vanilla extract
1 cup raisins (soaked an hour or two in 1/4 cup bourbon)
1/4 teaspoon allspice
1/4 to 1/2 teaspoon cinnamon
3 Tbsp unsalted butter, melted
Bourbon Sauce:
1/2 cup (1 stick) butter, melted
1 cup sugar
1 egg
1/2 cup Kentucky bourbon whiskey (less or more to taste)
If you want a non-alcoholic version, use 1/2 cup of water mixed with 1 Tbsp vanilla extract and 2 Tbsp of cider or white vinegar in place of the bourbon called for in the sauce recipe.

3 minutes is sufficient. Some cooking channels take 30 minutes, which is just not necessary, and a waste of my time. It looks wonderful!
I make bread pudding muffins for my B and B guests, they love them, pile the mixture into muffin pans, bake until crisp on top. If you sprinkle a bit of sugar before baking they caramelize, adding even more goodness. Soooooooo, good!
my boyfriend would like to know where this b and b is so we can try your bread pudding muffins
@@slaperigeduivel2816 😘 a year ago was in Canada near Banff in the mountains but because of Covid I shut down. Before that my B and B was in Scotland. Love Scotland, if you ever get the chance go! Can’t guarantee bread pudding muffins tho. But make this recipe and make the changes I mentioned. You’ll love them.
I made this for Christmas dinner and it was great, everyone loved it . I used half the sugar the recipe called for. Some coconut sugar and some white sugar because that’s what I had on hand. I did not use bourbon I only used vanilla extract for the sauce . Only problem I had was when cooking the sauce the egg was frying as well so I had egg pieces lol but I took them out prior to serving and ate them , it reminded me of when your having breakfast and the syrup from the pancakes touches your eggs .
Next time, try super low heat and/or make a simple glaze with powered sugar and heavy cream. I’d prefer that anyway. The sauce with the egg grosses me out.
I think the problem is that the sauce is a simplified custard, or pastry cream, and if u use the concept of those sorts of sauces u understand how to not get scrambled eggs. I wish they would have addressed that in this video because it's such a common problem!! I'd recommend heating the milk on its own, then in a separate bowl mix the egg and sugar together, and when the milk is just about boiling slowly pour it into the egg mixture while constantly stirring, this will temperature the eggs, and then dump the whole thing back into the pot and continue to heat and stir it
Too much sugar!
@@berdellfleming5074 Yes, I would try it with just coconut sugar and only 1 cup. And no sauce!!
I don’t do alcohol, but I soaked my raisins in Peru vanilla extract. The bread was absolutely delicious! Amazing.
to make vanilla extract, take 1 bottle of rum,or vodka , add 58 vanilla beans in a quart jar.let stand 6 months and it is vanilla . You say you dont do alcohal?????
@@phibber pretty sure by alcohol they meant liquor 🤣🤣 bless your innocent naïve heart
My favorite dessert (with a cup of coffee ).
I will definitely try this recipe because of the bourbon.😊
This is the pudding I grew up with and made for years - with a slight variation - I can't wait to make this recipe tonight. TY.
I love bread pudding. This a must try recipe.
Amazing and easy recipe! Thank you!
And here comes New Year's Eve, omg I can smell this.
My dear Lisa, this is one persons idea how bread pudding should be made. If you don’t like their idea, no one is forcing you to do it thus way.
Thank you very much, for this delicious Bread Pudding recipe🤩🤩🤩🤩🤩
This recipe is awesome. I'm from Nola and I grew up with this delicious 😋 recipe.

Hi I just wanted to say I used your recipe for Princess and frog theme party at home! 😍❤️☺️ I used the non alcoholic version as suggested by you in the info and again that was very helpful.
Ok I searched for a bread pudding recipe and your video displayed amongst many others. So what made me select your video? IT WAS ONLY 3 MINUTES. So let's see what you have for me. Pure, straight forward, well edited, articulate instructions. That's all I want and you delivered flawlessly. HUGE THUMBS UP.
Wow! How can you base the integrity of the ingredients on how long the video runs…no wonder why this recipe sucks!!
It looks delicious
Looks delicious. I have to make this.
Loved this.
I love this recipe ❤❤❤
I made this and it was amazing!!! Better than golden corral's but that's just my opinion. Thank you so much for this recipe!!
Delicious recipe... By the way, it goes without saying that people are FREE to add the amount of sugar or whisky or whatever they like and as much as they like, this doesn't make them worse or better cooks... Goodness me!
I agree
Infinita Fenix, thank you. Some folk are so anal
I made bread pudding with Honey Buns instead of bread and it was the best i have ever had
That sounds good. I've never done that but we have a bakery here that sells a pastry that's famous in the area called a chic de femme that a lot of us like to use to make bread pudding and I imagine it's pretty close to a honey bun bread pudding.
I have been dying for some good bread pudding with bookie sauce and this looks like the perfect thing!
What’s bookie sauce?
@@cmac3764 not even sure now
Love the recipe and the video , short & to the point 🖤 You have no idea how many videos there are 30 , 50 minutes long 🤨🤦 yours is so smooth , thank you for the recipe
very good!!
I made this for Thanksgiving and everyone loved it! The only change I plan on making is not adding 1/2 cup of bourbon sauce. It was much too strong. I ate mine without it. When I make it for New Years Eve I plan on adding much less. Maybe 1/4 nah..probably 1/8th. It was so liked that my grown daughter asked that I make this as dessert from now on.
Delicious!!!
This is my favorite food recipe site
Thanks great pudding
Decadent!!!😋😋😋
Thanks for sharing your recipe.

Fantabulous
This is how it's done people tried-and-true New Orleans style. I like to change up sometimes and use cinnamon raisin bread that's two days old (I'm a cinnamon and raisin freak) the sugar amount I cut in half and use Jack Black. Sometimes I use a little whipped cream to top it off. 😋
You are right! I also change mine up occasionally in the fall by roasting cinnamon sugar pecans in the oven, then soak them in the bourbon with the raisins especially for Christmas morning. Along with eggnog lol
@@auntbelinda6501, girl you know what I like. This change up here sounds even better. You know I'm already into cinnamon and raisins now you're talkin about adding two more of my favorites, pecans as my favorite nut and eggnog, which I could have all year long. You know I'm going to make this recipe. Thank you so much...
Tip: 350 degrees Fahrenheit for 5 - 10 minutes to toast the bread is a great, because it soaks up way more custard.
Grumpy Ian your fuckin pfp lol
Grumpy Ian - it is better toasted abit ,after it’s torn up - the milk is better scalded to - before you begin ..☺️
Not so much milk scalding these days because it is pasturized. In older recipes the scalding was to kill bacteria........
✋🏼🔥🌺 this looks amazing ! Thanks for sharing !new friend !!
I going to try it not a fan of bourbon but I love bread pudding from the south thank you for posting!
If you'd like to use something else instead of bourbon, try using 1/2 cup of water mixed with 1 Tbsp vanilla extract and 2 Tbsp of cider or white vinegar for the sauce. Hope that helps you!
Yea....this is an excellent recipe.
Wow looks delisious i need drink bourbon now can use whiskey
Mmm sooo good 😋
I must try this, Love Bread Pudding, but not that fancy...Thank you!!!
Microwaves the raisins and Brandy.... Great recipe for Christmas morning 😊😁😀
ANY morning. 😀
I'm drooling......
I tried this from another recipe and it was hard !?? 😱 I’m gonna try this recipe
Now that's a recipe!
Yes I love Bread Pudding !
Wow that,s a dessert!
I just licked my monitor :-)P
Brown Trout 🤣🤣🤡🤦🏽♀️don’t worry I believe We All Did 💯
Hahahaaaa!!!what an idea!!!!👍🏽🤣🤣🤣
Brown Trout Lol lol lol
uh? ............ew!
Brown Trout Tee Hee
Looks good!
Yum.Cook different must taste good
I can almost smell it lol yum
mmmmm lov it
I've never seen anyone soak the bread in milk without already mixing in the eggs and sugar. I wonder why they keep the two separate here. Every restaurant I've worked at makes a custard base, and then soaks the bread in that.
That's a good question. Not sure if it has anything to do with cooking the eggs. But I'm going to try it this way as well
A different approach, but to be fair it turned out really nice..As for me I like some more fruit! ( maybe mix in some Sultanas& or Cranberries and I usually dice a apple) and I might add a little cream to the Sauce.. But we see plenty of different methods& they all usually work out!
Yummy
Looks good bread pudding thank you I'll add walnuts cranberries
Nice
Best bread pudding ever.
1 c. sugar is plenty for the bread pudding- it’s not sugar pudding ❤️
Toasting the bread is better to - after you tear it or cut it up ❤️
i dunno ...La. has always been EXTRA astronomically sugary with their desserts ...
Oh dear god, man oh man does that look scrumptious ooo doggie
Try adding pecans. Yum
Yum, that sounds scrumptious 😋
Be sure to toast them in oven first. Mmmmm.
That sounds better
Plus I'd add a bit of brown sugar and nutmeg.
I had bread pudding last time i was in NOLA...damn it was good.
Yes, no one does it better omg
@@centuryeggcongee I agree. but part of what makes it so great is that i'm eating it in NOLA.
I was so wanting to make this, but three cups of sugar is out of my league. Thumbs up though for those lucky enough to enjoy it😁. Yum😥😥😥
My Nana used to put the Vanilla & a ‘TOUCH’ of Bourbon in the Milk...lol
If, like me, you gag at the smell of bourbon, I bet a good dark rum would work nicely instead.
I'm like you
It does. I’ve only ever had it with rum sauce lol
I was thinking that lol
I was thinking .. maple syrup!
I used Kraken spiced rum and it was by far superior. And I like whiskey a lot
Yum!!!!
i can't believe that any true Southern cook would soak the bread in PLAIN milk prior to adding the spices & vanilla.
Not sure what I did wrong with that bourbon sauce but it chunked up and I mixed it the entire time for like 15 minutes or so. It’s not creamy at all. The bread pudding however is something I’ve made for over 20 years and is awesome. If anyone has any tips for that sauce though I would appreciate it. TIA!!
New subscriber is in the building
Should you bake bread first before adding to milk and how long do yuo soak bread in milk
Can you use root beer or cream soda in place of the bourbon.?
But I'll soak raisins in a little milk and vanilla mixture.
I add Scotch whisky and thick cut marmalade and also add lots of grated nutmeg in the custard.
Yum
🍞 " Cest si Bon ! " 🍞
Store-bought bread is already more than "1 day old" when we buy it. So we can use the store bought bread same day we buy it.
What kind of awful store are you shopping at? French bread should only be sold fresh.
I grew-up eating bread pudding with either a rum or bourbon laced sauce. That's real bread pudding. The other versions with vanilla cream, etc., is just too sweet for me.
Absolutely!!
This is what I looking for
that's the New Orlean's take on the British bread pudding! See Mary Berry's one, really good! (retro). U guys like yr bourbon
Sharing is caring shared
I don't like raisins so I soak the bread in Bourbon and then I make it with mixing the milk and eggs together and then pouring that in but man it's good
Apricots are a good substitute, maybe try dried plums (prunes) or dried cherries.
You can mix the egg mix with the milk and save yourself one step. But otherwise not a bad bread and butter pudding.
Yummmy
What can we use to replace the bourbon or liquor?
Which brand bourbon did you use for your authentic bread puddin 0:22
Yummm🤤🤤
I soak the raisins in apple brandy for a week. Then I drain and use the liquid for the topping.
Does the alcohol cook out of the bourbon? I am on parole or should I just finished baking the bread throw it away and down the leftover bottle of bourbon!?
WOW !!!!
Yep it good
I'm in south Africa..I don't remember my ethnic group having a bread pudding...were a. Real small minority...but this I'll try...I'm 54...never tasted any such stuff...unbelievable
Your "Ethnic Group" has Bread? Eggs? Sugar and Milk? Yes? Then blame your Mother for being a lousy cook. Even the Chinese and Indian (Hindu) has a form of Bread Pudding. It's a very common global recipe. You're of Dutch decent? (last name is Dutch) the Dutch have their own version of Bread Pudding.
What can be substituted for bourbon sauce?
This bud's for you!
Nice and looks so yummy
but for Me I added some coffee for this to make my bread pudding with a little bit of bitterness and not to much sweet. :-)
I like bourbon but agree that the 1/2 cup of bourbon was too strong. Other than that it was delicious.
