4:47 you said hit “E” to extrude and then hit “S, Z” to scale on the Z axis. When I tried doing that it did not do what you showed. I hope that made sense

Well that's actually not practical.
You should be more consistent if you wanna success on RUclips. ( I know you have a lot of subs but it's truly sad that some channels that are not as good as you, but still they have millions of subs✌️✌️✌️)
