Quick miso rice noodles

  • Quick 15 min miso rice noodles recipe
    Welcome back to Health Origins! This time I show you how easy it is to make quick miso rice noodles - I absolutely love noodles, I can eat them every day!
    Miso Rice Noodles
    ▶️ Ingredients
    1 small bok choy, chopped
    150g fresh shiitake mushrooms, sliced
    A pinch of salt
    A few tablespoons of olive brine or water when the mushrooms start sticking
    1/2 medium courgette, sliced
    2 nests of rice noodles (the ones that only need soaking in boiling water)
    3 scallions, chopped
    1 litre of water, just boiled
    2 Tbsp white or brown miso paste (you can use red miso too)
    1 Tbsp miso sauce & 1 Tbsp of sweet chilli sauce per bowl and some gochugaru or chilli flakes to decorate the bowl
    Fry the mushrooms and bok choy stems with a pinch of salt for 5 minutes, add the courgette, rice noodles, pour the just boiled water over the noodles and add the bok choy greens and the scallions to the top and let it sit for 5 minutes with the lid on for the noodles to soften. Add the miso paste and mix well. Ladle the noodles and the broth to a bowl and add some soy and sweet chilli sauces, decorate with some gochugaru or chilli flakes.

    look good-i was thinking of making some miso soup from scratch (have some powdered vegan sachets by Spiral)
