  • Ole Hickory vs Backwoods Smokers w/ Adam from Cajun Blaze at the Hammond BBQ Challenge
    Wow! So much great BBQ info in one short video. In this interview Adam fills me in on what makes a great competition trailer, how he does his competition chicken, and breaks down which proteins work best in his Ole Hickory Pits and Backwoods Smokers pits.
    Adam Gautreau from Cajun Blaze would have to be one of the nicest guys on the BBQ scene. We shot this video at the Hammond BBQ Challenge in Louisiana, Adam's home state. Adam was so generous with his time. He took aboard his competition bbq trailer, showed me through the place and explained all the awesome gear he had in there and why it worked.
    I was really curious to know what his thoughts were about the best BBQ smokers: his Ole Hickory Rotisserie Smoker, or his Backwoods Smoker. And I was especially interested to hear about how he uses these smokers to make his competition BBQ chicken and of course his competition BBQ ribs.

    Interesting I see Royal Oak in a competition. You would think B&B or better.

      Why aren't you a fan of Royal Oak? I've only tried it once when I was in the States, but I really liked it.

      @@SmokingHotConfessions It's good for grilling, but it burns to fast for long smokes. imo

      @@brent4770 Fair enough. When I used it I was just grilling steaks in a GA with Grill Grates - I didn't try any low'n'slow.

      @@SmokingHotConfessions ….Royal Oak was my go to till I discovered B&B. It’s just an all around better burn IMHO
