When you said to not take it to seriously it instantly hit me that I have been doing just that, time for me to take a breath and chill out. Cheers for the tips loved em!!
I am just beginning the smoking experience and you have really helped in all my decision making. Your final comment sounds just like me. We need experiences in life in this chaotic world that just makes you feel good, and sitting outside , watching the dogs play, sipping on a bourbon, or drinking a beer, and listening to the blues while the smoking is cranking out those wonderful smells is what it is all about. Who would ever want to rush an experience like that. Thanks Ry you da man!!
#1 is soo true and relatable. most of my friends doesn't understand joy of smoking or grilling. cheap cigar with coffee or imported beer. and just by my self alone outside.
Dude... This is by far my favorite video! Your honesty and just plain being authentic is a testament to BBQ mastership! I have made many of those mistakes but you do learn along the way and correct these things. I made your fire roasted salsa video you did, a month ago and wayyyyy over powered it with too much seasoning. I assured the wife (who is Mexican and knows her salsa) I could correct my error. I seasoned it little by little, to taste and by my third try was making salsa she claims is better than her grandmothers! Great video and authentic to the core!
Talking about the mistakes you did has a double immediate results. First, talks about you and the humble you are about this matter, the second has to do with the knowledge you share (gift) with the folks listen to you. Regards.
As a 46 year resident in the KC Metro, I really get and understand your 5 points...I haven't F'ed up too many times, but when I do, it hurts! Loved the advice on seasonings, and relaxing during the process. It's such a joy to produce great smoked meat! BBQ is such a huge tradition here that when you can provide something for your family that makes their eyes roll back in their head...well, it's one of the best feelings in the world!
Great advice Ry! I've only been smoking for about a year, and I think I've made every single one of these mistakes and learned from them. Your video style is great...so laid back, so friendly. I really admire how you present on camera!
Thanks, Ry! My wife and I have progressed from a ceramic kettle smoker to an offset stick burner ( Oklahoma Joe Longhorn), and the growing pains are real. We’ve modded it, sealed it, added an extra thermometer, and are just getting down to understanding what makes it tick. We’ve made many of the mistakes you’ve outlined, and have had more than a few fails (brisket still makes us nervous!). For me, success comes down to one thing - fire and temperature management - the rest are matters of taste and technique (seasoning, wrapping/not wrapping, etc), that are developed with repetition and practice. Thanks for your videos! Your earnestness and demeanour make you easy to watch!
I love your video, thank you. I have been there and done that. Now I use a Masterbuilt Pro Dual Fuel Smoker (Charcoal and Propane ) I use Yellow Mustard, then rub my Ribs with Sea Salt, Pepper & Brown Sugar. After the smoker stabilizes @ 225°F, I add soaked Apple Wood chips to the chip pan, then put 2 full slabs of ribs cut in half, to fit the 4 racks into my smoker. I rotate the ribs every 45 minuets during the first 3 hours of 6 hour low & slow cooking. Then I wrap the ribs in foil, with apple juice & smoke them for 2 hours. Then I unwrap them brush with Sweet Baby Ray's BBQ sauce, and smoke them for the last Hour.
Hi Ry - I just discovered your channel and this is the first video I watched. I just started smoking a few days ago and truly love it. I appreciate the comments you made about enjoying the time and having fun with all the methods, etc. Several of my neighbors have been doing this for a while and they are extremely helpful. But your comments helped me realize I don't need to worry so much if the chops are dry and the ribs are a tiny bit under "fall off the bone". Thanks! Rob
I think I watched this video well over a year ago when I started to get interested in low and slow cooking. Your advice was invaluable. Of course it didn't stop me from making a lot of mistakes. Since that time, I have cooked a lot (4 or 5 times a week) and have watched a lot your videos. I think what I enjoy even more than some of your great and sometimes strange recipes is your obvious intelligence and gentle sense of humor. It's kind of like sitting down and B.S.ing with an old friend. Thank you.
FANTASTIC video! I needed this after watching so many and worrying what I might do wrong. Tomorrow is my first go at it with a bullet smoker ( a work related gift). I will be smoking baby back ribs with apple wood. Thanks to you I plan to relax a little and enjoy the process instead of worrying about every step I know nothing about.
Thanks for this video Ry! My journey through the world of smoke BEGAN in competition cooks!! The day after I retired, end of Dec. 2012, I attended a "fun" backyard contest mostly on WSM's. 2 weeks later I had my own 18.5" WSM and a BBQ Guru DigiQDX2 controller with a Pit Viper fan. This was the equipment my friend recommended back at Christmas when I said I wanted to smoke sausages, venison, etc. A few months later, same friend invited me to join his competition team. 2 years later I formed my own team. Let me digress for a moment-- I raced cars for a couple of seasons years ago, but the time crunch time of a 4 meat KCBS event was far more stressful than the starting grid of my first race!!!-- Fast forward to the present-- we have not competed for awhile, a rib cook-off set for late April has been postponed because of the quarantine. I have added a PBC, an UDS, built for me by my friend and teammate, a Santa Maria grill, and a Charbroil Big Easy fryer. I was told that pellet poopers didn't create enough smoke, then I heard about the Weber SmokeFire which got me interested in other pellet smokers. Now I am debating between the Camp Chef Woodwind WiFi, the new Cuisinart Woodcreek, and the Masterbuilt Gravity fed series. All of this was just to say how right on you are about not taking this too seriously- I started way too seriously, and now am enjoying the slower ride to smoke freedom and savoring the moments.
Dude, two years old video, I am watching it second time and it is sooo good and enjoyable. That is one of the best videos to watch. I am going to use my offset smoker tomorrow for the first time. And this video gave peace to my mind. Now I am ready for it. Merry Xmas and Happy New year.
Couldn't agree more! I can sit by my smoker with a drink for 12 hours and do nothing more than smell the smoke and meat, already tasting those flavors and listening to the crackle of the fire. So enjoyable!
This is the first video of yours that I have viewed and this is the first video I have commented on in years. I absolutely loved this video and the obvious love you have for smoking is an inspiration for this new guy. I have about 10 minutes left on the preseason of my first smoker. Thank you sir for this wonderful video.
Please refer to this video on the next live stream! It brings us back to why we make BBQ, for the fun and relaxation and almost therapeutic value we get. It about being outside, forgetting the grind of daily activities and lighting up that pit, smelling our favorite wood burning, hearing the sizzle when we flop that piece of meat on, cracking open our favorite beverage, grabbing the little ones for a game of horse shoes, seeing that smoke come from the smoke stack knowing something special is happening inside, conversing with friends and loved ones young and old around the pit, swapping stories, then sharing an authentic moment around something so great as a shared meal cooked outdoors the way it was intended
Been smoking for 38 years. Thousands of pounds of product. Your examples are spot on in the grand scheme of things. Most importantly is ENJOY the cook. Make a day of it. My backyard is full of things to "play" with to help it along. Shooting bows, pellet gun range, cornhole, etc. Oh and of course a full cooler.
What a humble video. Thanks for reminding us why we all do these sort of things - because we love to do it! I really appreciate the realness of your enjoyment - it seethes through your videos. I bought my first offset smoker today (An Oklahoma Joe's Highland Offset Smoker). Wish me luck!
I love videos like this. I just finished smoking a turkey I brined for 24 hours on my PK grill. That bird smoked for 7 hours straight lol it came out sooooo good!! I agree, it's all about the experience for me. I approach smoking meats the same way I do gardening. It requires patience. you have to "let it grow" until it's ripe for the pickin'. There is a perfect time to harvest a tomato, and the same applies to cooking times and cooking methods when it comes to meat.
I just got a new Traeger Pro 22 after using two Masterbuilt electrics. You are so right, they are good smokers, I learned a lot using them and made some really good stuff. However, the Traeger takes it to a new level. The difference in the bark is amazing. As soon as I'm done smoking something, I want to do more. Thank you for taking the time to do your video.
I almost fainted when I came across this video. Somebody actually admitting they made a mistake and learn from it and better yet past it and others. That's a beautiful thing thank you
@@CookingWithRy my wife just informed me that I to make many mistakes on a daily basis. You have a new subscriber and seeing as I'm doing a tri-tip this afternoon I'll be spending that time watching more of your videos
Thanks for #1...I'm on some forums, and time and again, everyone argues about "when should I pull the brisket and wrap it? What's the best wood to use?" blah blah...I've done so many smokes now that when I do brisket, I take more time prepping the meat the night before than I actually do the day I smoke it...once you learn your smoker and how it works in terms of what wood it takes, how long it takes to get a mature fire, etc...this gets really nice and leisurely! Love this vid!
You're absolutely right about over seasoning. I've gotten rid of all my store bought rubs and infused spices. Other than my pastrami rub (which has many uses outside of smoking), I only put peppercorns and garlic powder in my nutri-bullet. After salting the meat, I add just enough pepper and garlic powder blend (I don't even call it a dry rub anymore). I want the smoke to stick to the meat, not the dry rub. Once you ditch dry rubs, the types of wood chips start to matter to you more than anything else.
What a wholesome dude. The best piece of advice I can take away from this video is to have fun with it. Great content and camera energy .its like you were sitting right here talking to me . Thank you
You are so right!!! I sit in front of my smoker with a beer , watch into the smoke and have a daydream ... That's relaxing and after relaxing you get a very good meal 😁👍 Relax Frank from Bo-Be-Q Barbecue, Bremerhaven - Germany
Great video Ry! To your number 2 point...Time. I had to cook a 15lb brisket and then be at in-laws at 11:00 AM the next day to serve at 6:00 PM. Well, I started the brisket the night before at 7:00 PM, smoked until midnight, removed, wrapped and rested for 1 hour, place in the FRIDGE OVER NIGHT, took it to the in-laws the next day and put it in a 250 oven from 10:30 AM until 4:30 PM...let it rest in my cooler for 90 minutes. It was one of the best if not THE best brisket I've ever cooked...Bro-in-laws couldn't say enough good things. Long story, but you're right about the time thing and even if you have to "pause" the cook, it'll still work out...Just keep that thing wrapped! Thanks again and great content.
Why I love watching Ry's videos is that he always tells you the truth, like when he made a mistake or overcooked someone. Most other videos the guy always tells you how great their meat came out, no matter what. Even if you've been BBQing for decades, you can still screw up. It by no means a perfect science.
Super chill approach to smoking. A lot of these youtubers are very pretentious and treat their recipes, rubs, cooking techniques, etc as secrets. It’s hard to learn when half of the technique is a secret. Thanks for the video. I subbed.
Hi Ry, thanks for all of your guidance! I was getting a bit stressed during my first smoke today but I watched this video, chilled out a bit and really enjoyed my ribs once they were done! Keep up the good work 😊
I totally get liking to cook or bake outside. I do both a lot. I live a little over a half hour from the nearest one store town. Down a long dirt road. No visible neighbors. On a river… sorry about the sounds of rushing traffic, but I’m glad the cooking process helps tune it all out. I’m also off grid here. Solar and propane, and an outdoor wood oven to go with my 6 burner grill and a little vertical propane smoker. Cooking outdoors is super peaceful here. The views and the sounds and the smells… there’s nothing quite like it. I do all of my sourdough loaves outside and love making them. I make at least 20 loaves a week. Sometimes a little less but often a whole lot more Excellent video, btw.
I've been smoking for WAY over 10 years, and as hard as I tried to figure out a point you missed, you nailed everything I would have said if I had tried to make a similar video. I've never had an electric smoker, so I have been primal charcoal the whole time, but I have thought about getting an electric smoker for a while. That said, I have realized that all the smoke you're going to get in a cut happens over a certain amount of time, and then you're just cooking. To that end, I will often smoke many cuts for however much time it takes to smoke it, and then move it inside to the electric oven to finish the cooking part. No shame in my game, and I'm getting hella good results. End of the day - Just because you start it on the smoker doesn't mean you have to end it on the smoker. Good food is the end game - not some purist BS. I have three kids and have been trying to teach them to cook - NOT just follow recipes, but cook. I see a recipe as a suggestion more than a directive, and never follow them to the letter. But, I know what my family likes and that's what I always shoot for. I've screwed up plenty of smokes and grills for over 20 years. Thankfully, I typically don't screw them up as much or often as I used to, but sometimes I really stretch my limits on something to see what my limits really are. If you're not screwing up every once in a while, you're not trying hard enough, and you're damn sure not learning anything. I'm just gonna leave that like it is.
Thank you for your video on how to make it simple. I have a Oklahoma Joes Highlander for about a year. I have done ribs, roast, and chicken wings. This weekend I did a whole turkey. It turned out good, but took a longer time due not able to keep heat up. Chicken wings and ribs turn out too rich; over smoked. Learned to smoke half time then cover like you did your ribs. Being in the high desert of Calif sometimes wind made things difficult. Your videos have given me more tips and techniques to control smoker. Thank you.
I agree Ry, my favorite part of smoking any meat is the relaxing time during the cook. It's my time for some good tunes, a good beer or two and a great book.
Cheers from Australia RY. My mate and I got into charcoal cooking about 2 years ago, one of the first cooks we both did was a chuck roast. We searched RUclips for a tutorial how to do it on a weber kettle grill. We came across a video you did, it turned out great been hooked ever since, for me bbq has always been about just shooting the breeze few drinks and some music in the background family and good friends. I've only just recently pulled off a brisket letting it rest now, it's been a rainy day where I am but smoking a brisket and listening to the rain has made this Sunday afternoon one to remember. Your a champion RY keep the videos coming love watching them when im cooking for the day 👍
I have Bar-B-Qued an smoked meat for over 45 years an the key words in your video is "HAVE FUN". That is what it's all about. And I have had some great times with friends and family around the pit. Great video.
Just got my ProQ and yours is the first video which althought giving hints and tips, hits the nail on the head for me...it's about fun, learning, experience and experimentation. There is no definite right or wrong...like baking or bread making...or fishing. Thank you for the breath of fresh air....albeit smokey style!
Actually got my first smoker last summer, its an old offset smoker I found in my uncle's equipment shed on his ranch. He said I could have it if I wanted it because it was already there when he bought the place. And I gotta say I love that thing
Explained perfectly. Im learning on an off set, you really gotta babysit it, to keep temp. Definatly must have drink in hand, tunes goin, and a bowl packed to get thru it, hahaha.
I watched this video right before I did a smoked brisket for a gathering. The parts that stuck out to me and HELPED were the slow down and have patience and sitting out doors and just relaxing and enjoy. It all worked and the brisket came out perfect. We had none left over on a 14 pounder. Thanks bro!!!
Man you hit it out the park. We all tend to be competitive and have to be the best or beat your best friend. We need to focus on the real important things. Thanks for making this video.
Great video, I have been smoking in an offset for about 15 yrs, I never serve anything I haven’t test ran a few times, still learning with everything I do, also just bought a Oklahoma joe Bandera vertical, live it, wife doesn’t understand why I have so many types of grills
Good vid RY. You hit the nail right on the head to enjoy what you like to do. Whether it's smoking, grilling, saute, braising etc, have fun with it and don't take it or yourself too seriously. I've been smoking food off and on since the early 80's and I still learn something new every single time, especially with my OK Joe's offset. Speaking of my offset smoker, it's still in the shed waiting for all the mud in my yard to dry up, lol. Soon, like this weekend I'll be back at it and having fun. Thanks for sharing your insight. Cheers!
I love how all of your videos are simple and easy! I just got my first grill (Weber master touch) a few weeks ago and then got the Smokey Joe. Now you have me wanting to smoke some ribs and brisket and venture out more! And with the simplicity of your videos and explaining, I feel comfortable to do so. Thanks!
Yes, I love watching the smoke escape the vents and ooze out the sides of the lid and when I lift the lid of my kettle and the whole thing is filled with smoke........ahhhhh.
My first video of yours. I started smoking about 6 weeks ago and you are basically how I want to be feeling in 10 years. Really awesome video. Can’t wait for more.
I love it “smoker therapy.” I am relatively a new smoker, I smoke 2 to 3 times a week for sure most every week. Once for sure. I started out with an old fridge which worked great, but like you said electric just doesn’t do it. I still use it and it’s good for what it is but for the most part I use my charcoal grill now. And I’m sure I will change as the perversion gets worse. 😉 I subscribed maybe three weeks ago, love your show and really liked the show. You’re very easy to understand and you make things simple. For way too long I thought smoking was for some Guru chef in a monastery somewhere. It’s so simple and I love it and it’s delicious. I’m cooking for everyone. Keep up the great work. If you get bored check out our channel back to the basics 101. We do all kinds of crazy stuff on our ranch. If you drop by make sure to say hi and I would be honored. Happy trails Luke
I still can't make the jump from electric to wood fired when it comes to jerky...tried it twice in my propane smoker and it came out horrible both times. I know i'm doing something wrong. I do use my propane smoker for other things however
I'm glad I came across this video. I just received my first electric smoker for Mother's Day and Memorial weekend was my first cook in it. I'm already addicted and learning so much from RUclips. I know mistake #1 I won't fall victim to because I'm already looking for offsets - maybe 2 yrs 😉.
I love this video so much. I've been smoking butts with an indirect charcoal grill that my wife surprised me with for Christmas for about a year now. And there is definitely some therapy to it. I fire my coals outside of the grill and I only fire about 15 coals. I put them in the bottom of the grill and then throw some wood chunks on it. I put the actual grill grate on, but I have it wrapped in foil. Then I put the butt on the top rack. Once the smoke starts rolling I sit back relax, drink a beer, play with my kid, its a great time. I treasure those days.
I started out with grills, to electric smokers, to offset smokers, and back to pellet smokers. I don't miss babysitting stick burners, nor do I miss the ashy cleanups
Love the talk about being held back by the electric smokers. That is where I am. Trying to convince the wife to upgrade to an off set smoker. Had a master built electric smoker for about 12 years. Looking to get an Oklahoma Joe Highland smoker in the next few weeks. Thanks for the video & inspiration!
Currently have some beef jerky in my electric smoker that I got for free when a friend decided he wanted to upgrade. It's the first time I've ever smoked anything. I'm the kind of person that DESPISES cooking but something about prepping it for the smoker actually seemed somewhat enjoyable to me. I doubt I'll ever be as into it as you are but I could see myself enjoying this hobby about once a month or so
Just got a smoker today for my birthday. I wanted it because I fish I was interested in smoking our catch. But now I’ll be watching more of your videos to learn what else I can smoke!
I really appreciate this video. The number 1 reason is this is exactly how I feel when I'm cooking on my offset. Take your time, the smoke, the meat and having it all come together. I'm doing it for pretty much the same reasons. To have people enjoy it. Thanks. Greg.
Great video. I've always used pellet smokers, and have been on the fence about investing in a larger one. After seeing this video, I think I'll try the offset and stretch myself to learn something new.
Just got a bullet type smoker. It’s all here. Just need to clean it up, repaint it, got it hot for the first time without any food in it until the paint stops smoking and it’ll be ready to use. Good video. First time viewer. Subbed 👍🏻
Cooking With Ry - Thanks Ry. Every time I walk by those big briskets in the supermarket I kept thinking 🤔 “Now how can I cook that to perfection?” 😲 DING DING DING DING DING DING!!! ((( Smokerrrrr!!!))) 😝
Great video. I love the relaxing part of just sitting outside enjoying the day while the meat smokes. I’m new to the offset but not new to smoking as I’ve been using a WSM for a few years now. Thanks for sharing and leaning people in the rights from wrongs.
Ry, I have to to say this was one of the best smoking videos I’ve seen. Your commentary at the end was exactly how I feel about outdoor cooking. I love doing it for my loved ones and I just enjoy the whole process of it. I agree on the electric smokers. Loved mine but I was stuck on it and a gas grill forever. I have since switched over to a Weber kettle and an offset smoker and haven’t looked back. Thank you for your video, I’m going to save this one.
Excellent video......If anyone ever says they have never smoked a piece of meat and havent messed up doesnt smoke. Example, 3 weeks ago, I did a rack of ribs.....I nailed the meat but tried a new rub...Pit Boss KC BBq rub......The rub ruined my ribs.....It was so salty.....Live and learn
Don't wait. Get a smoker as soon as you can. It will literally change your life. I used to invite people over to grill food, now people ask me when they can come over again because of the smoker. I wish I got mine 10 years before I did.
I know that 516 comments in, that nobody is going to read this... but I have to express my appreciation for the this video. "Smoke Therapy" indeed. I'm a noob, but I've gotten some nice smoke rings and great tasting meat and all I have is an original Weber Kettle with a Slow-n-Sear and a SmokinCube and a Masterbuilt Portable Propane BBQ Smoker. Love charcoal, love Apple wood, love Hickory chunks. Love learning to relax with a New Belgium Trippel next to the grill or smoker. Enjoy the journey! (Subscribed!)
All I can say is, Thank you. I've been smoking meat for about 3 yrs and I've definitely made all of these mistakes. I do not own an actual "smoker", I use my gas grill and set it up for indirect heat and make foil packs full of wood chips. Your advice is the best I've heard so far and I'm quite shocked that more people don't say it, You have to do what works for you and it should be an enjoyable time not a stressful one. The things I hear most about smoking meat are, focus focus focus and temp temp temp. I'n saying that, yes there is an amount of focus needed and an approximate temperature range to be in, but it should not consume you or stress you. I do what works for me and everyone I've cooked for has been very pleased. I guess the one thing I had to learn quick was, time is taste, take your time for a great reward. Again, thanks.
I am a novice to the Smoking experience and just found your channel, thanks for helping me understand the value of joyexperience, "my term for what you taught me!! Cheers!
And time is that thing that you're first concerned with when learning--how long will it take? Should have listened to my mom: 'It'll be done when it's done.' :)
I love your videos, you're so humble! I cooked my first brisket yesterday, it turned out amazing in my books, anyhow my girlfriend asked me what would I do different next time?.... I said Try not take it so seriously and Relax and enjoy my time cooking.... Your no. 1, you got the ball on the head with that... thanx Ry.... Legend.
love your videos I love to smoke and sit there with a few beers it's my time for me.just like cutting the lawn it time to meditate your supposed to relax and smoke for the ones you love.
Thank-you for sharing your top 5 mistakes and your presentation. Today was my first go with my new Pit Boss 2-series digital electric smoker. Seasoned my pork shoulder using a rub I concocted a few years ago. My brother has been smoking with his Bradley for several years now and swears by it. So today was my first solo attempt at smoking and anything that could go wrong, did go wrong. Suffice to say I was very frustrated. I came back in and your video was on my screen and all I needed to do is press play. Frustrations gone, and I'm looking forward to getting back in the saddle with some salmon fillets. Thanks again Ry.
You never got to see all the mistakes I've made before I started making videos. Oh man, did I have some spectacular failures. But I've learned from them all, and you will too, and even when I was messing things up I was having a blast :)
Ry I have to say these points are great. Number 1 really hit with me, i just did my first smoke 2 days ago and i was proud of it. I'm now looking at a smoker of my own. A friend is telling me to get an electric but there was just something fun and relaxing about running the offset.
So I finally got around to watching this video and you hit on so many mistakes we all make. Good stuff RY! I want to see you cook 8 tri tip steaks ...only if you send me half of them. 👍🏼
Just now getting into smoking. Right now as I watch your video I am smoking a deer roast with hickory/bacon rub and wrapped in bacon on my charcoal water smoker that I picked up at Walmart. It has now been 3.5hrs since I put the meat on, I checked it at 2.5 hrs to add more water and spray the roast with a beef bullion spray. I figure in the next 3 hrs I will probe the meat to check internal temperature. I am running about 190 to 200 degrees and using soaked hickory chips. Really appreciate your video. Juddie - J&J TOA
I have an offset and am looking to actually get a propane smoker. There are times where I do want to set it and forget it due to whatever reasons but I do enjoy kicking back with some beers, hanging out with friends and restocking the charcoal/chips when it's a casual day.
Great video. I also just try to have fun and not freak out. I think the best thing about barbecue is even when you screw up all you have to do is put sauce on it.
The best Father’s Day I ever had was when my wife forgot and left me alone all day while I smoked meat, drank beer and listened to blues and Motown.
LOL. That sounds perfect :)
The blues....you can use!
Steely Dan always makes it into my beer drinking smoking meat days...
Few things better than those days!
Can't get much better then that
Smoking ribs every Friday has been getting me through this crazy year. Keep the vids comin' Ry!
Kody Crittenden everyday all day buddy!
Been smoking at least once a week as well ♥️
Ima adopt this and make this a rule lol
@Kody Crittenden Smoked ribs are better than grilled, and it's not even close lol
@Kody C. Yes. Low and slow ribs taste better. Grilled is way better than oven cooked.
When you said to not take it to seriously it instantly hit me that I have been doing just that, time for me to take a breath and chill out. Cheers for the tips loved em!!
I felt the same way. I do like the smell and watching the flames but gotta keep it closed lol.
guilty as charged
Yeah I love that fire-roasted salsa. It's so refreshing :)
Thank you! I really appreciate that :)
Now I use a Masterbuilt Pro
Dual Fuel Smoker (Charcoal and Propane ) I use Yellow Mustard, then rub my Ribs with Sea Salt, Pepper & Brown Sugar.
Thanks! Rob
Absolutely. If it's not fun it might as well be work :)
Thank you.
Thanks so much. I appreciate that :)
A video that I still watch once every few months.
The perfect synopsis for every aspiring backyard pitmaster!
This was Great... What a nice guy...The part I liked best was when he said " I Cant smoke or cook for compition "... AMEN...
Thank you for the kind words :)
The Cornhole Smoking Society...I sense a new club being formed :)
Rule #1 is the most important! Thank you for your time and effort to the bbq community. Keep em coming!
What a humble video. Thanks for reminding us why we all do these sort of things - because we love to do it! I really appreciate the realness of your enjoyment - it seethes through your videos. I bought my first offset smoker today (An Oklahoma Joe's Highland Offset Smoker). Wish me luck!
Enjoy that highland :)
@@CookingWithRy oh, I shall! I'm starting with a chuck and eventually the goal is to do texas brisket once I've mastered fire management. Thank you!
Yep, enjoying the process is so important :)
That's a beautiful thing thank you
I make mistakes EVER DAY. Sometimes every hour :)
@@CookingWithRy my wife just informed me that I to make many mistakes on a daily basis. You have a new subscriber and seeing as I'm doing a tri-tip this afternoon I'll be spending that time watching more of your videos
@@itsme-qk2vb Tri Tip is my favorite. Enjoy that hunk of beef :)
Thanks!
That's relaxing and after relaxing you get a very good meal 😁👍

I agree 110%, sit back and enjoy.
All u missing is the blunt
If I had a dime for every dish that turned out perfect...I might have half a buck :)
Super chill approach to smoking. A lot of these youtubers are very pretentious and treat their recipes, rubs, cooking techniques, etc as secrets. It’s hard to learn when half of the technique is a secret. Thanks for the video. I subbed.
Thanks for the kind words 😊
Hi Ry, thanks for all of your guidance! I was getting a bit stressed during my first smoke today but I watched this video, chilled out a bit and really enjoyed my ribs once they were done! Keep up the good work 😊
Smoking myself for the first time tomorrow on my Fathers Day present Char Griller smoker. This was a great video to watch. Good video. Cheers.
"Smokers Therapy" is right. I've come to really enjoy the process of smoking so much. Thanks for the vids.
Thanks for watching!
Sometimes a little less but often a whole lot more
Excellent video, btw.
Ain’t that the truth. So relaxing :)
Your a champion RY keep the videos coming love watching them when im cooking for the day 👍
Started watching your videos this week, helped us come in first place in brisket in an amateur competition in Alabama. Thanks for the help!
That's fantastic! Congratulations :)
I have Bar-B-Qued an smoked meat for over 45 years an the key words in your video is "HAVE FUN". That is what it's all
about. And I have had some great times with friends and family around the pit. Great video.
That sure is the truth. Appreciate the kind words :)
Awesome! So glad you enjoyed it :)
Cooking With Ry will follow in your footsteps. Thank you.
So glad you enjoyed it :)
Cooking With Ry thanks for posting!!
Man you hit it out the park. We all tend to be competitive and have to be the best or beat your best friend. We need to focus on the real important things. Thanks for making this video.
Gotta enjoy it or it starts to feel like work :)
Great video, I have been smoking in an offset for about 15 yrs, I never serve anything I haven’t test ran a few times, still learning with everything I do, also just bought a Oklahoma joe Bandera vertical, live it, wife doesn’t understand why I have so many types of grills
I've been thinking about a vertical for the next addition to the collection :)
Cooking With Ry do it, you won’t regret it
Good vid RY. Cheers!
Fire it up! Have fun! That's what it's all about :)
Wow Just realised my post almost replicates yours. great minds think alike clearly
Have fun with it. It's great learning by doing :)
I love it “smoker therapy.”
I am relatively a new smoker, I smoke 2 to 3 times a week for sure most every week. Once for sure. I started out with an old fridge which worked great, but like you said electric just doesn’t do it. I still use it and it’s good for what it is but for the most part I use my charcoal grill now. And I’m sure I will change as the perversion gets worse. 😉
I subscribed maybe three weeks ago, love your show and really liked the show.
Happy trails

I still can't make the jump from electric to wood fired when it comes to jerky...tried it twice in my propane smoker and it came out horrible both times. I know i'm doing something wrong. I do use my propane smoker for other things however
I'm glad I came across this video. I just received my first electric smoker for Mother's Day and Memorial weekend was my first cook in it. I'm already addicted and learning so much from RUclips. I know mistake #1 I won't fall victim to because I'm already looking for offsets - maybe 2 yrs 😉.
Enjoy that electric! I still use mine all the time :)
Let's applaud this man for great tips and impeccable sound quality
What about flavor and texture?!!
Just got myself a MasterBuild electric smoker, and i am super exited to start smoking, And this video was super helpful and vary relaxing.
Just watch this vid and was stressed about smoking, after watching this I'm chilled as thank you
Love the talk about being held back by the electric smokers. That is where I am. Trying to convince the wife to upgrade to an off set smoker. Had a master built electric smoker for about 12 years. Looking to get an Oklahoma Joe Highland smoker in the next few weeks. Thanks for the video & inspiration!
I love my Pit Boss electric but I found the pellets are to costly to smoke on it regularly. That's why I bought the offset.
Excellent video. Great delivery and focus.
Definitely a great starter video for anyone interested in the 1-2-3's of grilling and smoking.
I learn something new everyday, and I have a great time sharing those things. Thanks!
Heartfelt cooking is a form of art and should be relaxing. A great reminder and video, thank you.
I'm glad you enjoyed it :)
I really appreciate this video. The number 1 reason is this is exactly how I feel when I'm cooking on my offset. Take your time, the smoke, the meat and having it all come together. I'm doing it for pretty much the same reasons. To have people enjoy it. Thanks. Greg.
I always hope for that...it's in my top 3 reasons to smoke food
Great video. I've always used pellet smokers, and have been on the fence about investing in a larger one. After seeing this video, I think I'll try the offset and stretch myself to learn something new.
Just got a bullet type smoker. It’s all here. Just need to clean it up, repaint it, got it hot for the first time without any food in it until the paint stops smoking and it’ll be ready to use. Good video. First time viewer. Subbed 👍🏻
Enjoy that smoker! You're going to get great food out of that, and a lot of enjoyment :)
Thanks for the kind words. Smoker Therapy works :)
I agree. There's two kinds of smoking that are completely relaxing, and neither of them involve tobacco.
Thanks so much for the kind words :)
Love your channel.....you seem genuine. I like your self criticism for learning. New subscriber here. Ive been binge watching ftom the beginning.
Good video, Ry. I can't wait to get a smoker so I can make all of these mistakes.
Just make them BIGGER and BETTER!
Don't wait. Get a smoker as soon as you can. It will literally change your life. I used to invite people over to grill food, now people ask me when they can come over again because of the smoker. I wish I got mine 10 years before I did.
Wise words :)
And you can play paintball while you smoke your meat. Smart.
One of the best things you can do. I get more enjoyment out of watching people eat my food rather than me eating it lol.
I was on the fence about upgrading my Masterbuilt smoker until I watched your reason number 1. Convinced me. Thanks and great video.
I totally agreed with your word “Smoker Therapy”. I Like it!
I strongly agree
I'm going to read this :) Thanks for the kind words. And my favorite cooker is the good old Weber Kettle. I get great results on that when smoking.
Just stumbled across your channel today, glad I did. I feel the same way about smoking and enjoyed watching your video. Keep up the good work!
Thanks so much! It’s a great hobby :)
Smo'King BBQ Tips & Recipes sssaaaaawasaaśt
So glad you enjoyed it :)
my wife says i dont need to have beer everytime i smoke i just tell her im out side to smoke meat and relax so yea i do lol
I say oh you're right I don't. I have coke and whiskey. Lol
I smoky without brewski sometimes once in a big fat yellow blue moon, but overall, a blue moon in my hand 99% of the time or equivalent 😊
The gods of the grill would never smile favorably on the efforts of someone who didn't have a beer nearby. This might be superstition but why risk it?
Smoking meat without a BEER? Sacrilege!
Why would one do such a thing? Grilling with no alcohol??
I am a novice to the Smoking experience and just found your channel, thanks for helping me understand the value of joyexperience, "my term for what you taught me!!
Cheers!
Good tips. Couldn't agree more about temp and tenderness being more important than time.
And time is that thing that you're first concerned with when learning--how long will it take? Should have listened to my mom: 'It'll be done when it's done.' :)
Thanks for watching!
Legend.
Yep. Gotta enjoy it or it's work :)
Lots of good points made my friend!! Sage advice for sure. Rock solid words, it should be fun not stressful!!!
It's gotta be fun :)
Hands down one of the best videos I've seen in a long time. It should even be watched by those who do not smoke
love your videos I love to smoke and sit there with a few beers it's my time for me.just like cutting the lawn it time to meditate
your supposed to relax and smoke for the ones you love.
You are so right on all accounts. Thanks for reminding us!! Just enjoy it.
When I BBQ, I tell my friends, “The meat is done when the meat is done.”
You've got that right :)
Always keep sandwiches or pizza around for that reason.. Especially if 420 is involved lol 😎
I'm stealing that one. Hope you don't mind. I always have trouble with the bbq buzzards circling my grill.
That's a great way to say it!
Doesn't work with my wife and the kids. They say start earlier. Lol
Your few comments at the end got my subscription...that’s what smoking is all about. Smoke on everyone!
Awesome Video, Always learning, I often times will smoke or cook something small and think of this as therapy time!!
It is soooooooo relaxing to me. That smell of wood smoke...man I love it :)
Ry I have to say these points are great. Number 1 really hit with me, i just did my first smoke 2 days ago and i was proud of it. I'm now looking at a smoker of my own. A friend is telling me to get an electric but there was just something fun and relaxing about running the offset.
I love it. Really like your vides. Please continue to make videos. I smoke brisket as my coping mechanism. Love what you said. Thsks
So I finally got around to watching this video and you hit on so many mistakes we all make. Good stuff RY! I want to see you cook 8 tri tip steaks ...only if you send me half of them. 👍🏼
I'll send you 6 since you're such a good guy :)
@@CookingWithRy 🤣
I’m learning I done my first brisket last week definitely I need to keep this tips on mind 👍
I'm jealous, man. Sourcing a deer roast where I live is difficult. Enjoy that smoke!
Very good information. Cooking should be fun! If it is not let some one else do it. I wouldn’t enjoy the stress of Competition barbecue either.
Thanks so much!
LOL. When in doubt---sauce it :)
