    1 - Rub: 1x salt for 4x paper portions + mustard
    2 - Grass down, meat up
    3 - 2h for 225f
    4 - More 2h for 250f
    5 - after 4h - use water spray, or vinegar with apple. Spray all over the meat, no need over grass.
    6 - After around 5h. Get the brisket, cover with paper. Now grass up and meat down. Put it back to the smoker.
    7 - With butcher paper, raise to 275f. Leaver for around 2 - 2:30h
    8 - Check inside temperature with thermostat. It should also fell as a knife in a butter. If is not soft enough inside, leaver for another 1h
    9 - If ready, get the meat, remove paper. Wait temperature to get around 150 to star cutting. See video around 18-18:30 to check how to cut.

      Just need to add a 24 hour brine that includes garlic, onion, pepper, celery, thyme, rosemary, worchestyre sauce, mustard, pepper corn and beer!… that brine combined with this recipe is gold!

    Excellent video. Really liked how you explained everything. Tried this with a 3.5+ lb chuck roast using pecan pellets adjusting time as appropritate and it turned out fantastic. A bit dry on the ends but wow the flavor was great. keep up the great work. Very much appreciate it.

    Okay. Finished that first ever brisket and fillowed these instructions to the letter.I used a wood burning smoker and had a little trouble keeping the temperature level but when it was done it was awesome. Juicy and tender, and almost fall apart tender. Thanks for a great cooking class..

      Invest in a digital smoker. I just bought a masterbuilt for 350$ . I had a wood pan bullet smoker and was difficult to keep the temp. The smoker I have now is the bomb . Plus the store had a sale beef brisket a 14 pounder cost 30 bucks . That's why I bought the smoker .Smoke if you got em

      There are so many variables that go into trying to maintain temperature. You’ll figure it out just keep doing it.

      You’ll get the hang of your smoker, just takes practice. The set and forget it types are convenient, but some people enjoy a more hands on experience.

      @@laurafedora5385 On the temperature, I got a small fan and a short metal table, (stolen from the wifey), and by moving it closer or further away, I have been able to get better temperature control. Hey I really appreciate the positive comments form all. Thanks.

    I appreciate how infrequently you check the meat temp, using your eyes and feel to know where you're at in the cook and when to pull it. I'll try the smoke tube to boost the smoke flavor on my pellet smoker. By doing that I've come full circle to where I started smoking on my gas grill with a metal smoke box. :-)

    southern guys know how to make a good brisket! I followed this to the T. Got the smoker tube, pellet smoker and followed this 100% and I had the BEST MEAT IVE EVER HAD!!! thanks so much!!!! I'm so impressed with how great this was to follow. I even did the high drop for the spices and man... so good!

    I'm a 2 year culinary arts major. Mind you, I'm an Irish country boy as well.... From boiling a brisket for 35 years because of my family heritage, to buying one today with no clue what else to do with it.     You just have a way of making everything easier. Your ability to explain something and have everyone understand it and enjoy listening to you, second to none my friend. At 65 I have issues with understanding people who either talk fast or just plain have a voice that's difficult for me to hear, along with their not explaining things clearly. But I think a few others have already touched on the fact that you are a gentleman, a very nice man and very easy to listen to, and I really appreciate everything you have done and I will continue to follow you and I look forward to seeing lots more from you.     Cooked My first Brisket on the 4th of July using my 3 in 1 pit boss . Compliments all night from the family . The meat was tender fell apart and tasted amazing.

    Just took my brisket off the Traeger…I’ve tried for a long time to get a nice tender brisket but was never able to get it just right. Until now! This is by far the best brisket I’ve ever smoked…thank you sir for sharing your recipe!
