In other words, they bury a whole coconut, let it germinate and then take it out and dehusk it to get to the flesh. Coconut sugar is made from the sap that is obtained from the real coconut flower (inflorescence). The end of the inflorescence is trimmed and a pot is tied to it to collect the sap. The inside of the pot is coated in lime to ensure that sap doesn't ferment quickly. The sap collected in the pot is taken out the next day, boiled, and reduced to get coconut palm sugar. In India, such sugar is only made from Palmyra palm and not coconut palm. However, the process is still the same. In India, coconut sap is mainly used for making coconut wine/toddy.

Good thing I think is your gut biome will have big diversity from visiting India. Street looks festive, foods look very good, not sure how healthy it is with oil, sugar, but its okay for a holiday. Food from South India is very tasty, lighter than heavy sauces in the west or north India.
