- Lockdown cooking in Calcutta: This was filmed on 22 March, which was before the lockdown started in Calcutta.
This is for a Sunday lunch. Our meals usually consist of rice, with a dal, a torkari, and some kind of animal protein like fish or meat, and sweet chutney at the end. Both Insiya and I are cooking. On today’s menu are beans er torkari, leftover aam diye tok dal from yesterday, boal machher jhol and kool er tok.

Honestly, this is the most heartfelt video I've watched in the longest time. The fact that you guys showed that you're only human and filming can be a taxing business with so much happening around, touched me. I was a fan and today after this video I feel like I know you. I am a “Probashi Bangali” settled in England; very anglicised who loves her pint of beer, red lentil soup 😄😆 ( moshoori dal for us bongs) and carrot cake. I was probashi even when I lived in India coz I was born and raised in Mumbai. So Bengali by ethnicity but not quite so, culturally.
I don’t know how I stumbled upon your channel but watching this video made me so homesick!! I had such mixed emotions, nostalgia, excitement, happiness but more importantly the remembrance of my cultural roots. It was like watching my mom cook when I was a little child. The calm background music, the Bangla references, the honest-to-goodness narration style, the sizzle of the fish frying, the korola bhaja, ohh my the machher jhol(!!), the Bengali accent, the spotless kadhai and the final dishes make this a beautiful piece of work. I have become a fan and I will keep coming back to get a taste of my roots, and my culture. And I will start cooking Bengali dishes to celebrate my culinary heritage, something I had almost let go off. Thank you very much for your time and effort🙏🙏. The shooting style (for want of a better word) is truly earthy and professional.

I enjoyed reading your comments. I have been living in the US and Canada for a long time and miss the authentic bangali ranna at home. Initially it was difficult to reproduce it at any level, but with greater availability of ingredients over the years, it has gotten somewhat easier. Still we cannot ever produce the ambience that we grew up with. This Bongeats video brought us close to the original experience.

This video is quite close in terms of authenticity and I love the fact that they actually bothered to explain the bong eating process...😃😂 I used to get reprimanded quite a bit as a child as I was too impatient/hungry and wouldn’t eat the food in the correct order. E.g. eating the daal and rice with bhaja and torkari at the same time. 😀

For me it was a label that OTHERS used to describe us.... and which I adopted later on as a way to explain away my dodgy grasp of the language, my lack of understanding of cultural nuances, etc.
@@lailarafiq123 no we don't. Probashi would be pravasi in Hindi, meaning a migrant, not living where they're from. Bengali probashi's are distinct in the sense that many do attempt to drop their Bengali heritage, the language the culture, picking up hindi, Bollywood, or no Indian culture at all. We take our bengali heritage to be secondary. What made the word even more common in our vocabulary is probably the fact that we had a magazine called Probashi, that went in print pre-independence.
I'm not a bengali but watching the way you cook and represent your cuisine is just so beautiful and seems like a pure therapy to me. Keep going guys! 😇🥰

We stay Mumbai. I have been following your channel for quite some times. Your channel helped many young members of my family to prepare authentic bong dishes. It would great if you can load us receipe alu kachkalar torkari with dicey onion and piyaj kolir parath. My mom used to prepare it.
We moved to Sacramento this January, was watching your Q/A video from 2017, and thought we could connect but sadly (or happily) both of you had already moved back home. Wonderful videos/recipes (some of these recipes were never made at my home but we used to relish them at "biye bari-s"). Glad to see people of our generation trying to uphold our culture and values via cooking. I hope to continue to try making more Bengali dishes from here and impress my non-Bengali Delhi-ite husband :P stay safe!

I stumbled upon Bong Eats and you just found a new convert/devotee! I hated cooking, could not cook, did not want to learn how to cook... until the lock down happened! I was forced into the kitchen as I had to feed my family (my husband and my daughter). I realized that all this resentment towards cooking was passing on as negativity in the food I fed my loved ones. This realization awakened something within me and it was pretty sudden and something I cannot exactly put my finger on. And then Bong Eats happened one evening as I made your recipe of Cholar Dal and Luchi for dinner...and then your khichuri for lunch... and so many more recipes from your blog. Each one of them came out delicious and today I look forward to cooking and planning meals...coz I have one trusty Bong Eats! Thank you!
Love the finer intricacies in your cooking.. 3 yrs back when I attended my BFFs wedding(who is a bengali) I got confused with order of eating. In west we eat Chutney and Papad with rice. I discovered you, folks, during the lockdown. I've just only started cooking and I made alu sheddo/alu chokha looking at your videos. I am stuck with my fiance in the lockdown and my mum is living alone. I've never had to cook a day in my life because "maa kore dito."
But during the lockdown, I decided I'm going to be cooking and since I started cooking I haven't just learned "rannar andaaj" but also lost about 5 kilos because of all the healthy eating!
My fiance is a Tamilian and he loves watching your videos. He is also learning to speak bengali and he loves saying "macher jhol" for some reason!

Frying a boal is considered a colossal sin in my family. Since it is already juicy fatty frying it would take out the fat content.
We just marinate the fatty boal with regular masala, a small onion paste, tomato and ginger garlic paste with whole sliced chillies.
Heat the oil hot and just add the whole mix of marinate, and let it cook in low heat. Add coriander at the end.
This produces a very bhapa like boal with it's juicy fat intact.
We call it kacha Mach because we don't fry the fish. Hope you try it. ,🥰

Making mustard oil bottles out of emptied pril liquid dishwasher gel is an exquisite unique idea....😂 will give it a try...thankz
Try Gatorade bottles with twist open close mechanism. That works like a charm. I have been using it for quite sometime. My mom also became a fan of it as you can squirt oil out of it easily and twist close the cap when done. No fear of spilling. 👍

Its been 11 years since I left Bengal to study and work in other states in India, and eventually outside of India. I come to your channel everytime I miss home. I don't hail from a Bengali family, although three generations of my family have lived there.
So much of who I am comes from Bengal, and I'd love to be able to master Bengali cooking. Your videos are beautiful and every recipe I've tried our from your channel has turned out great, but I'd love to hold a cookbook in my hands guiding me through all the nuances of Bengali home cooking, like you mentioned, "bitters form the first course in Bengali meals, they're said to open up your tastebuds for the next course", I'd love a book highlighting these elements. Would you write one?
I can't stress enough how important it is to have more responsible vloggers/content creators to set the tone for the kind of mindful work that you guys are doing. I am going to be really candid here. I am Quarantining alone in a flat and i miss my family and friends and any sort of human touch. I have days when i am completely down in the pits and my anxiety makes it hard for me to take care of myself. Your videos have become such a comforting companion for me in these trying time.
