Simple, healthy detoxifying soup that nourishes your body (inspired by Persian Ash Reshteh)

    Making healthy and nourishing food is easy and this recipe proves it. Inspired by classic Persian Ash Reshteh noodle and bean soup with loads of healing and aromatic herbs that help gently detoxify our body while nourishing and satisfying. As always I am encouraging you to use best quality ingredients grown without the use of chemicals. May your food be your medicine. So let's make it.
    You will need large pot ( 7 L ) for the amount I made but feel free to adjust the ingredients if you need less.
    8 TBSP olive oil
    3 medium yellow onions thinly sliced
    1 head of garlic, about 6-8 cloves
    1 tsp tumeric
    1-2 TBSP dried mint
    2 cups cooked chickpeas
    6-8 cups vegetable broth
    1/2 tsp ground black pepper
    2 cups broccoli cut in bite size ( fresh or frozen )
    1,5 cup chopped kale
    2 bunches cilantro
    2 bunches parsley
    about 100 grams chickpea pasta
    1-2 green chili pepper (. optional )
    salt to taste
