I'm a Michigan native here in Saginaw, and it makes me so happy to see Gordon feature the local ingredients and beauty of the UP! He turned a normal french toast into an amazing work of art with the fresh apples and berry jam, safe to say I'm going to be trying this recipe out soon!

I also used pears besides apples(it perfectly completes the sour of the apples), I didn’t use brandy instead I sprinkle it with a little bit of lemon and it camed out perfect. Also cinnamon and vanilla.
As a frequent traveler up to the U.P., I think I know exactly where he was cooking at. The Monks he got those ingredients from are over in Eagle Harbor MI.(near the Jacob's Latter falls) They are a Catholic Monastery of the Byzantine Rite Monks and are serious about their faith and work. Their Abby is called "The Poorrock Abby", but that part is not open to the public. However, They also run a shop called the "The Jam Pot" that is and it really makes good stuff. From Their legendary Thimble Berry Jam, to actually good fruit cake, to their awesome cookies and more, you can't go wrong with the Monks. Granted it's a bit pricey but the proceeds goes to support the Abby and create a wild life preserve surrounding the Abby. On a good day, expect lines out the door so plan accordingly. They close up shop when winter comes in and the tourist leave, but open when spring starts.
Lol every Michigander ever is so proud of our state. Not a lot of “famous” or anything super event like happens. It’s all detroit so when somebody goes to a beautiful place up north we are happy you experienced it.

I’m French and we don’t actually call this “French Bread”, we call it “Pain perdu”, which means “Lost Bread”. It is called like this because we traditionally use old, dry bread that hasn’t been eaten yet. The dry (or “lost”) bread is then cooked again, topped with either jam or sugar, and so is given ‘a new life’.
He works so quickly and efficiently. I have to go over a recipe a thousand times and again another 2 times to make sure I got it right. He's great! I didn't know you could add cream instead of milk.
theres another way with drowning it and baking it but this is how i learned when i was a kid, think it was the first thing i learned to make partially because it was just some egg milk and throwing in a pan lol really good with just some butter and some powdered sugar

Then when you think you have them all gone, more fall. It’s exhausting. I envy you.
The best bread for French toast is a fresh Challah bread. But most states don’t have a large Jewish population so if you can’t get your hands on a loaf from a kosher deli, a loaf of Kings Hawaiian sweet bread will do, they’re basically the same thing. Challah bread is also especially good with honey 🤤 buttery sweet and honey

With all that thimbleberry jam and caramalized, syrupy apples?? No, it is fine without our great Michigan maple syrup. But some cinnamon might be nice depending on flavor of jam. I've never had thimbleberry. Personally, just butter and a bit of black raspberry jam is my favorite on French toast! Wishing I could spend hot summers in the U.P.! ~~A Troll.
I bet this would be great with mayhaw jelly and quince or figs and fig preserves .I will have to ask my southern wife to try it sometimes .No one messes around in the kitchen of a southern woman nor touches her cast iron down here in Alabama .She grows her own her mayhaws ,quince, figs and berries here and makes her own jelly ,jams and preserves .The homemade ones are so much better than store bought any day of the week .You definitely cannot beat homemade blackberry cobbler .I need to hush I am just making myself crave these things .
Love seeing the locality represented in the dish. This in itself could be a touring show I'd be down to watch. Creating dishes based on these local and fresh ingredients while being on site.
That's one reason I like watching some bike tour videos, sometimes they'll bring cooking supplies like a portable stove and healthy food with them and cook it out in the middle of nowhere.
