    If you're feeling a little under the weather, this is the soup recipe sure to cure whatever ails you. It's thick and creamy, and warms you from within, thanks to the addition of the curry powder. It's creamy and smooth thanks to a little potato cooked with the broth. Add a drizzle of olive oil on top, along with some roasted cauliflower and fresh parsley and it's as pretty as it is delicious.

    ROASTED CAULIFLOWER SOUP
    Serves 4-6

    2 pounds (907 g) cauliflower florets
    4 tbsp (60 ml) olive oil, separated plus more for drizzling
    ¼ tsp (1.25 ml) salt
    2 tsp (10 ml) curry powder, separated
    2 cloves garlic, sliced in half lengthwise
    1 cup (150 g) diced onions
    ½ cup (70 g) diced celery
    salt and freshly cracked pepper, to taste
    6 cups (1.5 liters) chicken broth
    1 russet potato cubed, about 1 ½ cups
    ! To garnish:
    Drizzle of olive oil
    Fresh Italian parsley, to taste
    Reserved roasted cauliflower
    METHOD:
    Preheat the oven to 450F. (230C).
    Place the florets and the sliced garlic in a large bowl and toss with 3 tbsp (45 ml) of the olive oil, salt and pepper to taste and 1 tsp of the curry powder.
    Bake for 15 minutes or until the cauliflower is fork tender and slightly charred in places. For a little more charring increase the heat to 475F (250C). Reserve the smallest florets for the garnish and set aside.
    Meanwhile in a large Dutch oven, add the remaining tbsp of olive oil, the onions and celery and saute until they are tender and fragrant.
    Then add the broth and the potatoes. Simmer covered for 10-15 minutes, or until the potatoes are soft and fork-tender.
    Add the cauliflower to the broth to warm through.
    Then transfer the soup to a blender and puree in batches until smooth.
    Transfer the pureed soup into a cleaned-out Dutch oven, taste for seasoning. Add more salt and pepper if desired.
    Add the remaining teaspoon of curry powder. Taste, and add more if desired (in 1/2 tsp increments) for a greater kick of spice.
    Ladle out into soup bowls, garnish with a drizzle of olive oil, freshly torn parsley leaves, 2-3 roasted cauliflower florets, and freshly cracked pepper.

    Made this! Delicious. Warm, creamy. Hits the spot on a cold day. I don't have a large standing blender so I used a stick blender and it worked fine. I also added a little smoked paprika (in addition to the curry) because it's my favorite spice. 😉

      Oh yes I LOVE smoked paprika too! Sounds like a great addition! Next time you make burgers, or roasted potatoes for brunch, mix a little smoked paprika into some ketchup and you'll have a delicious smokey ketchup :) a condiment that is so easy to make and so good too!

    YES! In my intention to eat only WHOLE foods for 2024 this soup is a total MUST! With Beth's tips this soup not only looks fabulous but easy to make, with simple, whole ingredients. May skip the TJ cheese crackers but will head to your link for the parmesan crisps . Thank you Beth for another winner for my WHOLE eating menus. Delish!

      You're missing out on the TJ's Cheese Bites! They're just so addictive. I actually had these first and bought 6-7 bags at a time because the nearest TJ's is an hour and a half away and I only went once a month. Then the pandemic hit and I was devastated. I tried all the other cheese crisps in the stores and none of them compared. I went back to making my own - which good, but aren't quite the same either. Really - try them!

      Oh yes I remember those days growing up in CT when we were SO ready for spring, but there was still snow on the ground! Along with the budding daffodils and crocuses! THIS is the soup for those days ha! Hope you enjoy it!

    Made this last week! It’s still cold and raining in San Francisco. So it was perfect and absolutely delicious. Truth be told, I could have just eaten the roasted cauliflower by themselves they were so delicious!! 😂

      Thank you always. An addition to this soup we like is browned butter with curry. Add curry powder to the browned butter, then swirl on top of the soup. You might like how it compliments,@@EntertainingWithBeth

    last night i vomited on my own bed due to drinking a variety of spirits and liqueurs. upon waking up this afternoon i was made aware of this soup via news bulletin and took occasion to make it for my family’s evening supper. it has excellent flavours and even helped to settle my acid reflux. thank you for this content CHEERS !

    When I do blended soups like that, I add the veg to the blender with the cold broth from the carton, then bring it up to a boil in the pot. That way you save a transfer step, time, and no risk of blender explosion.

    I love cauliflower soup! I've been a fan of cauliflower all my life and nothing beats silky, curried soup. I can't wait to whip this up. Just need to add the cauliflower to Monday's grocery order! All I have now is frozen and that just won't do for this soup.

    I love cauliflower soup. The original recipe I found uses thyme (my favorite herb) and bay leaf. It didn't call for roasting the cauliflower, but I started doing that and I agree, it adds a depth of flavor. I also have a curried (red / yellow) eggplant lentil soup recipe that I started mixing with roasted cauliflower and potatoes...kind of a "curry" hack but with lentils instead of chickpeas....Haven't tried making my cauliflower soup with curry instead of thyme, but now I think that is my next variation on the theme....since I can't have (cow) dairy and miss my "cream" soups...the cauliflower soup is one of those soups that feels creamy without any dairy in it. And I'm one of those people who has always been a big fan of cauliflower, whether seasoned with curry, thyme, or made the way my Italian stepfather taught us with butter, Romano, and Italian breadcrumbs...since broccoli is too strong a taste for my tastebuds, Cauliflower is my cruciferous veggie of choice...

    Nice recipe. I would not sauté the celery with the onion. I would sauté the onion first to extract the flavor and create light caramelization. Then add the celery. When you add both at the same time, you forego proper cooking of the onion.

      Onion always first,unless you using bacon. Then I would put in the celery. Looks like a great healthy recipe. I’ll make it to a nice consistency to taste the layers of flavors.

    Hi Beth. Love your channel! You have a little bit of everything I love, entertaining, cooking, travel, and I am an unapologetic francophile. :)(I've been to the south of France a few times and Paris 9 - It's my favorite place in the world) I also used to watch your Dad all the time! This soup looks delish and I will definitely try it. I was in a restaurant recently and had a creamy carrot soup that was SO GOOD! I have been trying to replicate it at home, but there is a depth of flavor missing that I just can't put my finger on. I roasted the carrots like you did the cauliflower, added a bit of ginger, chicken stock, cream. I don't like curry, but I am wondering if that's the little sump'n sump'n I'm missing. Any suggestions? Looking forward to your book!

      Ha! Oh it could be! But I also find with any veggie based soup, you also need a base of sauteed veggies too! I do onions ( 1 cup), celery, (1/4-1/2 cup) garlic (1 clove) and a great flavor booster, 1 chopped shallot! Sautee all that up in some butter, with S/P to taste until tender and fragrant, then add the roasted carrots, 4 cups of chicken broth, blend it. Then taste. You could go the spicy route after that with curry powder, or go a sweet route with a little bit of pumpkin pie spice (1 tsp to start, that has the ginger in it). Then instead of heavy cream I may add a drizzle of full-fat coconut milk at the end with a little cilantro to balance out the spice of the curry powder. I think all these ideas would definitely add more flavor! So glad you enjoy the channel (and Dad's show way back when! I'll be sure to let him know he'll get a kick out of that!) Heading to France soon, with more French Eps on their way! (With a few travel excursions thrown in I want to show you guys this year! ) stay tuned!!

      I've made cauliflower soup with and without the potato...the potato gives it a "creamier" texture, but either way has been fine.

      Over 40 years ago I had cream of cauliflower soup while on vacation in Nantucket and I felt it was the most delicious thing I've ever tasted. I'm definitely going to try this recipe Beth. Roasting the cauliflower may be the answer to my quest for that amazing soup I experienced many years ago!

    I love cauliflower, but not a huge fan of curry. Is the taste of the spice very pronounced or could it be skipped maybe? Thank you Beth!

    As an Indian,I must admit I have never heard of a curry powder 😀It just doesn’t exist here 😀But nevertheless,fantastic recipe as always !

      You're right, as Indians most of have never heard of let alone used curry powder. My guess is that it's an anglicised version of garam masala. There are a few brands which sell it on Amazon. The Madras curry powder by Ship is supposed to be the best

    Why not using a stick or immersion blender right in the soup pot? Transferring to a blender in one or more batches is not necessary, just cumbersome & dirties another item!

      Sure you could use an immersion blender. I don’t have room in my kitchen for both, so I just settle for my blender. That way I can make smoothies with it in the morning too. 💕
