Because who puts gravy on the topside(browned side) of biscuits?
You turn all 4 halves browned side down to expose the absorbent part of the bread, and put gravy on that..
That's literally what everyone does lol, even those who've made the mistake of doing it the other way before..
It preserves the slightly crispy side of the biscuit, and the biscuit absorbs more gravy goodness.
I'm Seventh Day Adventist's couldn't possibly eat this sausage gravy less it was Vegan Soy sausage.
Morning Star has awesome breakfast sausage though I prefer their Vegan buffalo wing's.

You can also use milk, you don't have to use cream.
I grew up eating the stuff and I do not think we ever had cream in the house. Between the sausage fat and the bacon grease why would you want all the fat from the cream?
I've tried it with cream and went back to just milk. If I'm not particularly lazy that morning I'll go outside my front door and snip some chives to put in top.

If milk/cream fat is a determing factor, you can always use 2% or skim milk. It may effect the flavor of your gravy but you can compensate with added seasoning. Make a batch and separate into small bowls/containers and add different seasonings. You might even try different biscuits. I like to use Pillsbury's Grands biscuits on occasion if I'm not having just biscuits and gravy. Admittedly, I like to add butter/margarine to my biscuits most times and occasionally will add butter/margarine to my gravy(leaving the biscuits alone). Everything is subject to if I'm having something with them and even if I want to spend that much time cooking.

No cream needed but it won't hurt, it's also the best with hot breakfast sausage to get the kick instead of red pepper in the gravy. The heat of the sausage and creaminess of the gravy work perfectly together.
Hot breakfast sausage is still not enough usually. Gotta add those pepper flakes.

I make what my grandmother called brown flower gravy.. cook the sausage take out of the pan .. add flour to the grease and cook it till it’s dark brown adding salt and pepper as it cooks. Add milk a little at a time till it’s the thickness you like .. then crumble sausage and add to gravy .. absolutely delicious and I have her cast iron she used for 40+ yrs

This brings back so many childhood memories (especially of hunting with my dad). He would cook it up around 4 in the morning and we would stay warm with a full belly and enjoy the sunrise.

Love this recipe, i learned to make sausage gravy from my southern grandmother and I see why it’s so prolific, because its so simple. Never had to add fat but I’m sure it just makes it richer which is good. I will say for those who are curious or worried about how much flour to use when converting the recipe, you just need to lightly coat your sausage in flour and brown and add just milk if you don’t have cream, from there it’s just salt and pepper to taste. Bonus tip, I’ve made gravy with a blend of chorizo and southern style sausage and it’s delicious btw. :p

My all time favorite meal. Grew up on this in the south. My family always adds a splash of some darker coffee after the milk for a lil extra something. Don’t know why but it works wonders.

Red pepper flakes and a healthy amount of black pepper is key!! Great job. I sometimes also add some extra seasonings (whatever i have that would be in breakfast sausage). Such a great meal.

Biscuits and gravy: it's NOT just for breakfast anymore, though you may not want breakfast sausage and use regular southern gravy instead. Normally cooking a pound of bacon will give you the needed amount of bacon grease for your gravy.
I was so upset to get a plain white gravy when i went to a restaurant down south. Just my opinion; sausage gravy is a million times better. Possibly it just wasnt a great restaurant that served it.
As a southerner sawmill gravy is just disappointing. Sausage gravy is the only way to go

This brings back so many memories of when I was younger😢 Connolly's to have this for breakfast at least twice a week my mom used to make it for us before we went to School. @Marcel_Audubon I use 2 separate pans. I render fat from breakfast sausage and use the fat and butter to make my roux. I heat milk, fresh ground pepper, and salt in a separate pot to 180°. I add in my roux to desired thickness and fold in the cooked sausage. Dishwashers love you when you don't have caked on flour to the bottom of the pan

My mother in law was from Kansas and made SOS for me and the kids for dinner many a time. She made her biscuits from scratch. She used burger. She also made a killer peach cobbler from scratch too.

In the Army, we called this shit on a shingle (SOS). The army used toast, not biscuits.
I make my recipe a little bit different than yours and utilize different seasonings of course for flavor. But i agree this a good heartu breakfast for those who enjoy biscuits and gravy of course.

I prefer butter with stock as the base for my roux in this case (given how much cream is going in) and I’d go with cayenne or even jalapeño powder rather than red pepper flakes but the addition of that ham stock concentrate is genius! Anyway no shade intended, despite my pedantic BS this looks incredible; god-dayum I gotta try this next time I’m up early enough for breakfast… which is actually pretty rare… honestly this is gonna be a drunken 2am feast. Which is great cuz it seems really easy! Nice work man

This is still my favorite breakfast meal, and my mom made it all the time growing up in southern Indiana on our farm. As I grew up, I became a biscuits and gravy connoisseur and constantly would try it while traveling. One of my favorite aspects is how everybody makes it just a little different And everybody has their own twist. Yes, of course most of the time they’re going to find a similar type recipe but the people who do something just a little different to make it their own are what gives this dish. Such a unique aspect. Well, that and the fact that, like French toast, it was a meal designed to take expired biscuits and leftover grease and make a dish that tasted amazing.

I grew up in southern Indiana and most of the restaurants would split the biscuits and put the gravy on top. I moved to Texas and ordered, they brought out a basket of biscuits and a bowl of gravy!

That’s how it’s still done in Indiana and that’s how I prefer it but at the same time I wouldn’t mind the Texas way as long as both the biscuits and gravy are super hot. as long as everything is steaming, hot, then it doesn’t matter to me!
