HOW TO PREPARE THE PERFECT HOMINY/CORN FROM SCRATCH FOR POZOLE OR MENUDO IN THE INSTANT POT

  • The best waynto prepare your delicious pozole is by using hominy and now you can prepare it from scratch . Is so easy and fast !!
    What is (Cal)? Cal is what some Mexican people/latins used to soak the hard corn you leave it all night soaking and some people simmer the corn for a few hours until is soft and you are able to remove the skin from the corn. This helps to grind the corn better to make (nixtamal) you can use the nixtamal to make corn tortillas and tamales. It makes it more digestible & nutritious. Cal (slaked lime) or (calcium hydroxide)
    MAIZ/HAMONY
    6 cups dry corn / maiz pozolero
    water enough to cover the corn
    cal
    8 QT instant pot

    Thanx. I still use a large old-style pressure cooker. Am going to use that and follow this recipe. We have a grocery here in Opelousas, LA, that has the largest selection of Mexican foods, so I will look there for that CAL. I love hominy and have been making it on top of the stove by boiling for hours, letting sit overnight, etc. This is going to be a lot faster. I have a lot of field corn that has been left by the heavy harvesting machinery. Full cobs that the machinery missed. Let nothing go to waste is my motto.

    Looks yummy but I bought a can because I didn’t know what is was to be honest and it didn’t have much flavor. Ugh. I guess this is how it’s done. Thank u:)

      Don’t worry a lot of people use the can and to be honest I used the can until I learned how to prepare the corn hominy using the instant pot . Is way faster and easier and you can also make it ahead and keep it in the freezer. This is the traditional way of making pozole 😉👍🏼

      You cook it for 5 mins and after the time you let it test for 5 mins 👍🏼

      Hello, Cal is is calcium hydroxide is sold as pickling lime or slaked lime in some places and cal in Latin markets. Is used to nixtamalize corn to soften and remove the outer skin . The corn becomes pozole (hommini) and you can make the masa for tortillas and tamales. As you can see you don’t need much and you do rinse it a couple of times👍🏼I hope this helps

      go to “views on the road” on youtube. she has tons of videos for nixtamal. this method seems it could work for mass but you need a metate to grind it fine enough

      Is CAL and it helps when you peel of the skin from the corn and it also helps maintain the freshness for a long time. Is Calcium ( hydroxide)

      debe de ser la cal normal que usar para la construccion. Es la que se usa acá cuando se hace pozole. No existe otra cal, solo hay una cal.

      Sorry I am not sure what lye is but I used Cal is the white powder that you seen in the package. I am not sure if they are the same thing sorry 😉

      Pickling Lime(calcium hydroxide) was used. It's safer to work with.

      There are different ways of making lye.
      Mixing Cal with water is a way of producing a lye....as is (wood) ashes with water.
      Both solutions produce lye.

      Hi, you need to boil the water first before you add the maiz, let it cook for 1 hr before you add the cal. After you add the cal keep cooking until it starts to peel.
      Turn off the stove and remove the water and add clean water and fallow the same steps
