Wow! That's great, I always thought that it was hard to animate animals walking but now it's just practice

Ostrich knees don't actually bend backwards; that's their heel-- Their knees are high up by their rib cage.

I can't not see the horse's front shoulder as the human's torso and it hilarious.

I don't like when people say quadrupeds have knees that bend backwards, when it's really the heel. It's better to take the actual anatomy of the animal into account when animating, and i also think it's much more intuitive to consider the actual foot, because then you can more easily relate to what bends where and how.
In addition to that, the human/ostrich method is really flawed, because the human's knee becomes the horse's wrist, foot becomes toe, hips become elbow, and then you're missing the horse's shoulder and shoulder blades, that you have to try and infer from the rest. Especially when teaching animation, i usually don't recommend cutting corners, because beginner animators will quickly get confused
Though, it's not a bad idea to split the animal in half at first, makes it much easier to teach the walk mechanic if you consider two bipeds with whacky anatomy instead.
But hey, that's just my input on the subject. And a little step by step tutorial is always useful for learning animators looking for quick access to extra information, so that's cool.
