  • In this video I show you how to make keto macaroni pasta with Lupin Flour and Vital Wheat Gluten. Good-bye Cauliflower Mac ‘n Cheese! This is our first video in our Pasta Shapes series, stay tuned for more shapes.
    COOKING INSTRUCTIONS: Once baked stir into the sauce, once the pasta sauce is cooked. Or simmer in hot, salted water over medium heat for 1 to 2 minutes.
    STORE in an airtight container for up to 7 days or freeze.
    For 8 Servings (normal portion)

    INGREDIENTS:
    80g or 2/3 cup Vital Wheat Gluten
    (I used 122g each of the VWG and Lupin)
    90g or ½ + 1/3 cup Lupin Flour
    10g or 2 tsp Salt
    1g or ¼ tsp Xanthan Gum
    1 large Egg, beaten
    12ml or 1 tbsp Extra Virgin Olive Oil
    88.7ml / 3oz / 96g Water

    I tried this recipe recently and it truly is a game changer! Thanks Mel!
    My pasta turned out dirty green for some reason, but besides that it was AMAZING. Nothing like Konjac, mozzarella noodles or other substitutes. Its 85% the same as regular pasta in flavour and texture. Its more than good enough for a pasta addict on keto.
    Do remember to roll it out thinly - I didn't, and pasta took forever to dry out. But thats my mistake, next time I'll do better.

      I ended up making fettuccine by hand, just to try it out before I get a machine. Now I'm for sure going to get a pasta shapes thingy, its going to be awesome!

      @@CookwithMel1 sorry to spam this thread, but maybe someone will find this helpful: DO BUY THE PASTA MACHINE! It's sooooooooo much easier! I have a hand cranked one, and it shaves time of pasta prep by 90%!

    The pasta appears to come out with a sort of grainy texture to it. Is that because the lupin flour is ground up a bit more coarsely? When it came out in big lumps, it looked a lot like clumped brown sugar. Do you know if it's possible to grind the flour to make it a bit finer, and what would the effect be on the gluten's ability to bind things together? Thank you.

      Hello. Mine is clumpy too as I show in the video. That's how you know you have the right texture. The firm dough helps to hold the shape of the pasta you are making. I'm happy with my lupin flour so I've never needed to grind it. Maybe change your brand. My other question is...was the pasta mixed well? That could also be a reason. The gluten works well regardless of the texture of the flour. Thanks so much.

    Hi Mel!
    Love the recipe, and I want to try it, but I don't have any sort of pasta machine, or even a proper stand mixer.
    I assume I can mix the dough with my hands, but will it come out right if I cut it into fettuccine shape by hand? Or is this recipe best for more "compact" shapes like macaroni?

    Hi, Mel. I've just discovered and subscribed to you and have had fun making your cheese pasta that is baked in the oven. It came out perfect twice, but then it was not quite right. So I bought the pasta attachment for my kitchenaid - the one that makes spaghetti and fettuccine. But for the life of me I cannot find your pasta play list, that you keep mentioning, or even one of your pasta recipes that uses the spaghetti/fettuccine attachment. I've gone around in circles now for 2 hours. I just received the attachment and lupin today and I want to play. Please help me.

    It's clear all of your Keto Pasta recipes work. Have you ever tried a pasta recipe incorporating oat fiber?

    I will try your version because I try the original with the philips pasta maker and nope, did not works. And the original recipe is confusing. I dont have that extruder so I will try with the manual machine. Thanks Mel.

    Question please. If I’m making baked Mac & cheese, can this be boiled to soften, and then baked as I would normal Mac & cheese….or would this dissolve the macs?

      These need much less time to cook than regular pasta. I would skip the boil to soften part. As the pasta is baking, the warm sauce will soften them 😋

      Hi Tomi, there are 3 keto macaroni recipes on the channel. One uses cheese so it's flourless, the other uses almond flour. You will find them all in the keto pasta playlist.

      Hi Yvonne, You can dry out 2 ways. Place in the oven and turn your oven light on. I like to have my oven slightly warm as well. Another option is to let them dry overnight by leaving them out on your benchtop or counter. 😁

    Mel I need help 🤧😭 I bought a kitchen aid mixer and the pasta press attachment. I had try like 4 batches and then finished stacked inside the attachment. I had try less water but still the same

    can the pasta be stored in a Ziploc bag without being refrigerated, or does it need to be refrigerated?

      Hi. Without a freezer? Use within for 3 days.

      so just to make sure I'm clear, store it in the freezer for 7 days or store it in the refrigerator for 3 days?

      @@cherylmiller6949 sorry. You can store in a ziplock bag without fridge or freezer for 48 hours. I have done this so it was fine for me.
      In the fridge - 3 days
      Freezer - 6 months

      Go with I Don't Sugar Coats quantity but do eyeball it so that you get the right texture.

      It needs 2 minutes to cook. You can boil it, cook in the sauce or bake it. It doesn't take long to soften though

    I have made two lupin flour pasta recipes, this would be the second one. I have found I like the texture and the flavor is decent, however, the smell is terrible. I find this pasta tasted and smelled much better when boiled one day with all the windows open, lol, and eaten either several hours later or the next day. It smells really terrible to me and I am not sure if it is the lupin flour or something else in the recipes. Both recipes use vital wheat gluten and maybe that is the cause of the vile odor? I am going to try a different brand of lupin flour and gluten with the next batch I try. Has anyone else had a problem with the terrible smell? I smell it in the finished, dry product as well, but boiling really releases the odor!

      It's the Lupin flour. Yours is probably the light yellow one? Try Anthony's Organic Lupin flour.

      @@CookwithMel1 I just bought the Lupina Brand--the other was Modern Mountain---claiming to be sweet white lupin flour. The bag of flour did not have that odor though. It is only apparent upon making the pasta and boiling it. I will try switching everything out and let you know what I find. The other recipe I used was from Black Tie Kitchen and it also had the odor. If I can't solve the problem, I'll just have to boil it outdoors and then use it, lol! I will try Anthony's next. The variation between products often does make a huge difference. There doesn't seem to be must standardization between brands of the "same" product. Love your channel and am going to try your coconut flour rice after the holiday. Keep up the great work!

      Thanks so much. I'm suspicious lol...the sweet white lupin flour is the better lupin flour. Did you check the other ingredients? I wonder what could be giving off the smell though.
