I'll mention a couple more: Space Base is quite good at all counts from 2-5. And the feel changes as you change player numbers because of the balance of own actions to actions on other players' turns. Medieval Merchant is another that plays great at every player count from 2-6. But because of the way that your income is handled, the pace of play is very different. With only a few players, you have to manage your money very carefully or you will quickly run out and lose badly, while with many players, your income per turn goes way up, but now the big constraint is on time rather than money. It has good tactical complexity and it can be played quickly if everyone knows the game. (We played a four-player game in about 40 minutes including setup at a convention when one of the players had an upcoming event).
For honesty, I want to give a shout out to Hansa Teutonica, specifically The Big Box which has a 3-5 player count. The original box listed 2-5, but the 2 player rules were removed from the big box because it wasn't as good. The game comes with a 2 sided board, specifically to adjust for player count.
Citadels is amazing. Does not get much love lately but… have so many good memories of it with high player count games. 7 is my favorite. Kind of fills in as a party game for 6-7 players. For the price, more people should give it a go

Puerto Rico is my #1 favorite game of all time. We have played it a few hundred times at all player counts... except for two. I need to try it.
Yeah I also haven't tried the two player variant but it looks really good and by all accounts works really well
Viticulture scales perfectly.
Two games we like at different player counts: Ethnos, Forbidden Fruit.
Dinogenics scales as good as Viticulture.
The best player count for Agricola back there is 0 😂.
