Air Fried Jacket Potatoes - quick & easy using an air-fryer

Air-fried jacket potatoes
Serves 4 small jackets 🥔
Don’t you just love a quick & easy recipe for a mid-week meal, and it’s healthy & you could put any filling you like. Here is how I now make a jacket potato using a microwave & Airfryer, making a jacket potato in half the time than using a conventional oven!
Wash them first, dry off using kitchen tissues, using a fork prick them all over but not too deep, then put them in microwave giving each potato 3-4 mins at high heat for 800w. We did these 4 small/ medium sized potatoes for 12-13 mins & placed in a microwave silicone bowl. Take them out of microwave & coat each potato with a little oil such as rapeseed or avocado or light olive oil. Then place into airfryer & set at manual for 200C for 12-20 mins. Start off at 12 mins then add a couple of minutes each time until you are happy. Serve with your choice of fillings.
