Achi tarahh se tamatar ko paka len aur ek bhi piece ko aapko karchi ke saath daba ke mash karne ki zarurat na pare.... Fir uske baad grind karne ke baad bhi thora lambe time tak paka lena, khatta pan to lambe time tak pakte pakte hi kam ho jaata hai, sugar add kar len baad mein... Aap taste kar lijiyega na uske according aapko pata chal jayega... Aisa kitni baar hota hai ki hybrid milte nai hain, hum bhi restaurant mein local tamatar use karte hain, bass saara khel pakane mein aur storage mein hain , kaju magaz ko bhi zada le sakte hain, balance karne ke liye.
Jaise maine full portion bataya hai jo ki 4 persons ko serve karta hai, maan lo 5 bande ko serve kar dega, kyunki 12 pieces ka portion tha wo aur kuch bhi saath mein complementary cheezen hoti hai..... To ab 40 persons ke liye aap 80 ko 8 se multiply kar lo, as each is serving 5 people.... Baaki ki gravies bhi unki grammage ke according 8 se multiply kar lijiye
Paneer ka hisaab bhi dekh lena.... Cutting ka and grammage ka..... Mera jo party pack hota hai jo 8 to 10 people ko serve karta hai usme mai 30 pieces deti hoon.... Zada chote nahin deti, fir gravies zada legegi..... 40 people ke liye 120 karne hain...naa hi zada chote aur naa hi baut zada bade, lekin aise ho ke gravies bhi kam lage..... Kyunki gravies ki costing zada hoti hai. Aur humesha bulk preparation mein gravies ka hisaab bhi thora upar neeche hota hai. Kahin party order dena hai to hum cream bhi achai tarah se use karte hain.
