tried today it’s excellent! i have 2 questions: can i use 500g of top floor & oven top & bottom with or without fan thank you
With 500g of top flour, the texture will be better but the print will not be as pretty. We usually bake without a fan.

Hi Dr Leslie, have you tried substitute condense milk with sugar? Wonder if it turn up the same?
I haven't tried it, so I don't know. There are many other recipes out there without condensed milk, maybe you can try?

Would your dough recipe work for pressing out cookies with a cutter (for open faced tarts)?
Its a little too crumbly for the open face tarts.

Hi Dr Leslie, your video shows putting the pineapple tarts into the fridge for 10-15mins before the first bake @160C. What’s the purpose and if I don’t refrigerate, what’s the impact?
You don't need to put into the fridge. I just did it to firm it up because it was a little warm.
