Corn has more starch than arrowroot and therefore more calories. It’s also less in nutrient value than arrowroot. It’s pretty common for corn to be genetically modified. The kernels are then heavily processed to get to the inner part that makes the corn starch. Finally, I’m pretty sure there are some additives to cornstarch to help with shelf life.. Arrowroot powder is gluten free and is being studied to treat hormone imbalance and digestive issues. Mostly, we’re just staying away from mass processed foods! Arrowroot powder has a pretty laborious processing method, which is good!
